Where’s the beef?
I took an old recipe my family enjoys and shook it up a bit. I frequently stuff a slice or cube of cheese inside the raw, ground meat when making my patties. This time I used a cheese STICK and formed my “patty” around it! The trick- pick a cheese that isn’t mild- so a pepper jack or sharp cheddar. Then mold your meat around it forming a leak-proof seal. Grill as usual making sure to not flip or bother it too much. Place the completely cooked “burger” in a hot dog bun and top as usual. It’s amazing and a real conversation starter!

Have you ever grilled fruit? I really enjoy it. Make sure your grill is clean ie: free from meat grillin’ debris ????
But really, I like grilled fruit. Especially grilled pineapple. SO GOOD! Peaches were on an amazing sale the day I went shopping so I stocked up. DO you remember when I made these last month during a cooking demonstration? They were a big hit so I thought they would make for the perfect dessert for Labor Day.
The preparation is simple: Slice peaches in half, remove the pit. Place the halves open side up in a dish or on a cookie sheet. Sprinkle the open halves with cinnamon and sugar (and as to how much? that is up to you) and place in the refrigerator for 1-4 hours.
Remove and place peel side down on a grill that is at a medium heat. In 3-4 minutes flip over and cook another 3-4 minutes. Remove from grill and serve with a nice scoop of vanilla ice cream when they are still hot.
So.Good.
So let me just tell you how easy this recipe is and how MUCH people love it. They do.
I try to make a version of this at all of my cooking demonstrations because it is so refreshing and light. I puree half of a medium sized seedless watermelon and pour it in a serving pitcher. To that I add 32 oz of low sugar lemonade. Typically I use the Santa Cruz brand because it has lower sugar and I like the taste. That is it. I would guess it’s 8 cups of watermelon puree and 32 oz of lemonade. I find this lemonade at Meijer and recently it has been on sale.
OK. This dip is pretty life changing. Yes- I said life changing. Why? Because dips are a great way to enjoy and meld many flavors into one mouthful. You can’t waste that real estate! You have to get as much as you can onto that one.perfect.bite.
So, I love elotes AKA Mexican street corn. The hot corn, the cheese, the flavor! Confession though- I do NOT love eating corn on the cob. Blame it on the worry I will get it in my teeth. So be it.
This is the BEST Hot Corn and Bacon Dip you will ever have. Period.

I resort to great ways to incorporate the flavors of my favorite roasted corn with cheese, ooey gooey dairy and bacon. Yes, ladies and gentleman I said bacon. This is definitely a dip for your cheat days.
This. This dip holds the keys to the meaning of life.
Ingredients
- 6-7 ears sweet corn (regular sized) cooked and cooled, kernels cut off
- 3/4 C mayonnaise
- 3/4 C sour cream
- 8 oz cream cheese, soft
- 1 lb bacon, cut into small pieces
- 1 small sweet onion, chopped
- 1 poblano pepper, roasted on the grill and chopped
- 1 8.8 oz package Chihuahua cheese, shredded
Instructions
- Cook corn by boiling, grilling or in the microwave.
- Cut off kernels.
- In a skillet cook bacon, sweet onion and roasted (and chopped) poblano pepper- until bacon is cooked.
- Combine cream cheese (reserve just a bit to sprinkle on top), mayo, sour cream and cheese in a large bowl with a mixer(it is just better that way).
- Add the bacon mixture, mix to combine, then add the corn.
- Pour mix into a baking dish (I used a 13×9 glass baking dish) and sprinkle with remaining cheese.
- Bake at 350 degrees for 15 minutes or until it is bubbly and lightly browned.
- Serve immediately.
