Easy lemon pasta will become your go-to ‘no time for dinner’ dinner! It’s fresh, light, and takes just 15 minutes to make. You can have it meatless, or serve it up with your favorite protein!
We had a really long weekend, but it was great. My oldest had a weekend-long swim meet in Evansville, and he did pretty well.
So we wouldn’t be tempted with junk from the concession stand, I made a few snacks for us to munch on while sitting in the natatorium. For the first time, we won in our battle against what I like to call Boredom Grazing. When we are siting at a baseball game or an all day swim meet, we almost always answer the siren sounds of hamburgers sizzling on the grill or nacho cheese sauce being poured.
Items that I would never give the time of day to suddenly seem irresistibly appealing. I act as if I’m dying tomorrow, and I simply must have that cheesy pretzel before I go! And the boys, my children who normally shun such nitrate and sodium filled gastro garbage, practically get onto their knees and beg for a hot dog!
But this time, the Tallman Family won over the familiar foe of empty calories and useless carbohydrates. I feel pretty pumped about that. We enjoyed an early dinner on the way home, and I thought we were all set for bed upon our arrival. I never would have guessed that we would encounter traffic and an automobile accident. By the time we got home, we were all hungry. Or, that’s what we told ourselves, but it was probably thirsty and tired. I knew I had a few things that I could throw together quickly for a light dinner.

15 minutes later, we had this delicious and easy lemon pasta for dinner. ????
Sometimes, when nothing sounds good, or we want something light, I make this easy lemon pasta. It’s super simple to make, and it goes well with grilled meat, fish, or shellfish. I will usually add leftover meat when I have it, but this time, it was the perfect meatless meal.
I don’t typically have salad dressing in the house because I like to make my own. Well, most of the time, because the Husband really likes Western dressing on his taco salad. I have 3 or 4 salad dressings that I make from scratch, and I find that they are cheaper and definitely tastier. You need to do what works for you and your family, though. There are so many good products out there right now that taste just like homemade. A favorite of mine is the Tuscan balsamic from the Giada line at Target. Super yummy, good on a lot of things, and best of all, it’s not expensive!

Ingredients
- 1 pound whole wheat spaghetti (or pasta of your choice)
- 2 TB butter
- 1 lemon, juiced and zested
- 1/4 cup extra virgin olive oil
- 1/2 cup freshly shredded Parmesan or Romano cheese
- salt and pepper, to taste
- 1 clove garlic, minced

optional garnish: chopped fresh parsley and basil sprinkled on top
Instructions
- Cook pasta according to directions on the box.
- After pasta has cooked, drain and put into a large serving bowl. Add the butter and toss with tongs to coat, then add the remaining ingredients and toss again.
