It was a Bacon Pancake Muffins kind of day…
Here is something I love. I absolutely love that I post meal ideas or plans on my Basilmomma Facebook page and it starts a conversation. Take this recipe for instance. This morning I posted that my son requested “pancake muffins” for his birthday breakfast. Within seconds I had someone ask for the recipe. This makes me feel good. It is SO the reason I do this.
To call this a recipe is like calling Nicki Minaj a musician. This is more of a concoction (like she is just a performer IMO).
I make this using one of the two meats in a regular basis. It is a great make ahead, grab and heat breakfast. Give me a few minutes and I will dig up my old post from 2009 where I made this using blueberry chicken link sausage (that is fabtastic!!).
The base stays the same- just add the cooked meat of your choice. Browned and well drained crumbled sausage, sliced sausage links (think circles) or crumbled cooked bacon. I had bacon today so that is what I used. We dipped ours in a local maple syrup, Burton’s Maplewood Farm, but use what you like here. In my opinion this is one heck of a hand-held, kid-friendly breakfast. I literally made this in under 30 minutes and there is enough left over for 2 more meals for my sons.
I used a baking mix from Pioneer Brand in this recipe. You can use Bisquick, Clabber Girl or make your own with my friend Becca’s recipe. In my real life kitchen we eat like real live people. Not everything is staged, organic, hand grown, ground on the premises. Yes, I use baking mixes and GASP even cake mixes. Guess what- we are all very happy and healthy. Use the baking mix- you will get no judgement from me.

Ingredients
- 3 C baking mix
- 2 TB sugar
- 3/4 tsp cinnamon
- 2 1/4 C milk
- 3 eggs, beaten
- 1 lb bacon, cooked, drained and crumbled
- non-stick spray or muffin liners
Instructions
- Preheat oven to 425 degrees.
- Spray or line a muffin pan- I used 1 12 spot and 1 6 spot.
- Combine all ingredients in order until just mixed.
- Use a measuring cup and portion out the batter evenly in the muffin cups.
- Bake for 15-18 minutes or until the toothpick comes out clean.
- Remove from pan and serve.
