I make something from time to time that my whole family loves, is very portable and will keep in the refrigerator for a few days. It is perfect as an after school snack or an on the go ‘mini meal’. They aren’t messy and even little hands can hold them.
Yes folks, I am going to admit that again, I use canned dough. Gasp!
I do. Not when I am wanting to serve nice, hot rolls with dinner (and that’s just a personal preference her..not judging) but for the purposes of making use of the pre-made stuff for snacks, pot pie toppers, etc you just can’t beat it!
I put all kinds of things inside. A few of our favorites are: diced ham and Swiss, scrambled egg, cheese and peppers, sliced strawberries and cubed cream cheese, pizza toppings, PB&J, bananas and Nutella…..I could go on and on. You see where I am going here, right?
We don’t eat a whole lot of pre-made food in this house. This was just a road I decided to take a few years ago and frankly, it is easier than you think once you get it all down. But, I do cut corners from time to time. I think we all do but I will admit it.
Peanut Butter and Apple Pockets
1 8 count can of Grands whole wheat or buttermilk biscuits
1/2 C of peanut butter. You may use more or less.
1 Red Delicious apple, sliced and diced thinly (it will cook better inside the pouch)
a bit of Turbinado sugar for the top, optional, I used Sugar in the Raw
Close each roll and using a fork crimp to seal. Sprinkle with a bit of sugar. |
Bake at 350 for 15 minutes. |
Let sit for a minute before eating. Perfect for the lunchbox! |
