Chocolate Stuffed Banana Muffins from Scratch

Banana muffins are a delicious treat on their own, but chocolate stuffed banana muffins are the best banana muffins! This easy banana muffins recipe creates moist, fluffy, homemade banana muffins with a secret surprise of chocolate baked inside!

I confess that I’m slightly obsessed with easy muffins recipes.  A quick glance at my recipe index is proof; One bowl muffins recipes, muffins stuffed with fruit, and even Nutella muffins! But there’s something special about chocolate stuffed banana muffins. Not only do these homemade muffins use my favorite flavors,, chocolate and banana, the melted chocolate stuffed inside of them is like getting a sweet kiss from someone you love!

 

This chocolate stuffed banana muffins recipe starts with my go-to recipe, for banana muffins from scratch.  You just need a little bit of filling in each muffin, so make sure not to use too much chocolate. Otherwise, it leaks out, ruining the surprise hiding inside. Losing chocolate onto a baking sheet is not a good thing, my friends.

Aside of that, making chocolate stuffed banana muffins couldn’t be any easier!

Mash ripe bananas in a mixing bowl. Add oil, sugar, salt and mix just until well blended. Add the egg and vanilla.  Fold gently until mixture is all incorporated.
In another bowl combine flour, baking soda and baking powder. Add to wet mixture. Stir just until moist.
Lightly spray a 12-cup muffin tin with a non-stick spray and add a little bit of batter into each cup. Drop a small amount of Nutella (or filling of your choice) into the center of each cup. Top them with remaining batter to completely cover the filling.
Then, pop the pan into a preheated 350 degree F. oven and keep yourself busy for 15 to 20 minutes while they bake to golden perfection.

Ingredients

  • 3 ripe bananas, mashed
  • 1/3 cup unsweetened applesauce (or equal amount vegetable oil)
  • 1/3 cup sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 2 tbsp flax meal (optional, for added fiber)
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 6 tbsp chocolate chips

Instructions

  1. Preheat oven to 350 degrees F.
  2. Mash ripe bananas in a medium sized mixing bowl. Stir in applesauce/oil and sugar, mixing until well blended. Add the egg and vanilla and mix gently until mixture is all incorporated.
  3. In another bowl, combine flour, flax meal, baking soda and baking powder. Add dry ingredients to wet mixture. Stir just until moist. Over mixing will result in dry muffins.
  4. Lightly spray a 12-cup muffin tin with a non-stick spray and add a little bit of batter into each cup. Place 5-6 chocolate chips into the center of each cup. Top them with remaining batter to completely cover the filling.
  5. Bake at 350 degrees for 16-20 minutes, or until tops are light brown.
