One Bowl Peanut Butter, Banana Chocolate Chip Muffins – This muffin recipe is made in ONE bowl and the ingredients can be swapped out so that you can create any type of muffin you’re craving!

Here’s the deal. I make this muffin recipe at least twice a week. Sometimes I use mini-chocolate chips, sometimes I leave them out. Other times I sub finely chopped apples for bananas- or make these straight up peanut butter. My point is this is a base recipe you can build upon. The best part (besides the taste!) is you make this all in one bowl. One.

When it comes to dirtying up my kitchen- Aint nobody got time for that! (said in my best Sweet Brown voice…). But really- I don’t. And neither do you.

Get all of your ingredients ready, preheat your oven, line your muffin tin with paper liners and get busy. These will be on your table, or in my case- on their way to swim practice, in NO time!

Ingredients

  • 6 bananas- mashed
  • 1 C sugar
  • 2 eggs-beaten
  • 3 C all purpose flour
  • 2 tsp baking soda
  • 2 tsp baking powder
  • 2/3 C butter, melted (I let mine brown on the stove top for deeper flavor)
  • 1 tsp salt
  • 1/2 C peanut butter
  • 1 C mini semi-sweet chocolate chips
  • 4 TB milled flax seed (or 2 TB if you prefer)

Instructions

  1. Preheat oven to 350 degrees.
  2. Line 24-30 muffin spots with liners.
  3. In a large bowl add the wet ingredients and stir to combine.
  4. Sprinkle on dry ingredients in order.
  5. Stir until just combined but to not overmix.
  6. Add an even amount to each muffin spot.
  7. Bake for 20-22 minutes or until a toothpick comes out clean.

    So good. I made these muffins the other day. It is a huge recipe so I had lots to freeze and everyone in the house loved them.

    Just tried these out...skipped the flaxseed since I didn't have it or wheat germ on hand. I think the temperature was a little low, so I think upped it to 300-350 degrees. Great, filling muffin!! THANKS!
