Hand held meals are one of the easiest things to make for a lunch box. From sandwiches to healthy muffins and empanadas to lettuce wraps, here are some fantastic and easy hand held recipes to help you power your lunchbox!

My boys love hand held, “grab ‘n go” meals, especially at breakfast and lunch time. We are so busy in the morning that we rarely have time to sit down for breakfast. I make sure that the boys have something healthy to grab on their way out the door.

Favorite hand held breakfasts of ours are Egg Muffins and Potato Egg Puffs.

Hand Held Asian Turkey Lettuce Wraps

Get out of a boring lunchbox rut by packing these yummy Asian turkey lettuce wraps! Crispy romaine gives just enough crunch, and the filling is packed with flavor. Serve alongside favorite lunchbox items, like yogurt or orange segments, for a complete meal.

Ingredients

  • 1 Tbsp. vegetable oil
  • 1 lb. lean ground turkey
  • ¼ cup hoisin sauce
  • 2 cloves garlic, minced
  • 2 Tbsp. rice wine vinegar
  • 2 Tbsp. low-sodium soy sauce
  • 2 Tbsp. water
  • 1 Tbsp. grated ginger
  • 1 Tbsp. brown sugar
  • 1 tsp. cornstarch
  • 1 tsp. toasted sesame oil
  • 1 cup Eat Smart® broccoli slaw
  • 2 scallions, chopped
  • 8 romaine lettuce leaves

Instructions

  1. Heat oil in large skillet over medium-high heat. Add turkey and cook 5-7 minutes, or until cooked through.
  2. Whisk together hoisin, garlic, vinegar, soy sauce, water, ginger, sugar, cornstarch and sesame oil.
  3. Pour sauce over turkey and add broccoli slaw. Cook 2 minutes, or until heated through.
  4. Spoon turkey into lettuce cups and top with scallions.
