Mini biscuit turkey cheeseburgers may very well become your new favorite game day food. Ground turkey, cheese, and all of your favorite burger fixings, piled onto biscuit dough, then baked until golden and cheesy.
Everyone loves these tasty cheeseburger cups, and they’re so easy to make! They make a perfect light dinner, or serve them for after school snacks, or for game day food.
The first time I made them was back in 2014. I ran two cooking demonstrations during the Indiana Farm Bureau State Conference, held at French Lick Resort. The theme of the demo I made the biscuit cheeseburgers for was called ‘creating smaller portions using muffin tins’. The crowd, entirely older women, had no idea who I was, because not one of them used social media or the Internet! It was interesting, to say the least.
The recipe shown below calls for using traditional burger toppings, like ketchup, mustard, and pickle relish. Don’t let that stop you from improvising, though, because this recipe is easily adapted.
Build these mini biscuit turkey cheeseburgers with whatever toppings your family will enjoy.
Create taco mini biscuit turkey cheeseburgers by adding some spicy jalapeno jack cheese and salsa (I love the salsa that Sabra makes). Or build a southwest mini burger, adding a bit of 3-bean chili, cheese, and onions to them. They will be delicious served with homemade grilled potato salad, baked beans, or Spanish rice.

I really like the crispy bits of melted cheese that form around the edges of the mini cheeseburgers. That is a benefit to baking these in a muffin tin.

Ingredients
- 1 pound ground turkey or other lean ground meat
- ½ cup chopped red bell pepper
- ¼ cup chopped onion
- ½ cup ketchup
- 2 tablespoons yellow mustard
- 2 tablespoons dill pickle relish
- 1 tablespoon Worcestershire sauce
- 12 ounce package (10) refrigerated buttermilk biscuits
- 2 ½ slices colby jack cheese , cut into 10 pieces
- Dill pickle slices (optional)
Instructions
- Preheat oven to 400 degrees F.
- In a large skillet, cook ground turkey, bell pepper, and onion over medium-high heat until turkey is brown, using a wooden spoon to break up turkey as it cooks. Stir in ketchup, mustard, pickle relish, and Worcestershire sauce.
- Lightly press a biscuit onto the bottom and up the sides of each of ten 2 1/2-inch muffin cups. Divide turkey mixture among biscuit-lined muffin cups.
- Bake for 9 minutes. Top with cheese and bake 5 minutes more, or until cheese is melted. Cool in muffin cups on a wire rack for 5 minutes. Remove cheeseburger cups from muffin cups.
- If desired, garnish with dill pickle slices.
