Last fall, Luke Bryan toured the country in his concert series, Farm Tour 2015. As part of the promotion for that tour, Luke shared his favorite chicken casserole recipe with Red Gold tomatoes. Red Gold was kind enough to share it with us, and they invited me to tour their facility. It was an amazing experience and I have included some photos at the end of this post.

Besides the fact that it’s so easy to make and full of delicious flavors, I love how versatile this recipe is. It lends itself really well to using up the leftovers for other quick weeknight meals. If you have any leftovers, that is! It would be the perfect filling for burritos or tacos, or you could fill tomatoes or bell peppers with it.
Oh, and if you don’t want to cook up the chicken for this dish, you could get a store bought rotisserie chicken, remove the skin, and chop it up. See what I mean about versatile?

Luke Bryan’s Easy Chicken, Rice and Red Gold Tomatoes Recipe

This comforting and easy chicken casserole combines chicken with yellow rice, tender vegetables, Red Gold tomatoes, and cheese for an easy weeknight meal. It’s Luke Bryan’s favorite chicken casserole!

Ingredients
- 1 (10-ounce) package yellow rice mix
- 1 tablespoon extra virgin olive oil
- 1/2 cup chopped onion
- 1/2 cup chopped green bell pepper
- 1/2 cup chopped carrots
- 2 cups cooked chicken, diced
- 1 (15-ounce) can black beans, rinsed and drained
- 1 (10-ounce) can Red Gold® Petite Diced Tomatoes & Green Chilies
- 2 cups shredded Monterey Jack cheese
Instructions
- Preheat oven to 350 F.
- Prepare rice according to package directions.
- Heat oil in a medium sized skillet over medium heat.
- Add onion, green pepper and carrot; sauté for about 10 minutes or until soft.
- Add cooked rice, chicken, beans, petite diced tomatoes and 1½ cups of cheese to the skillet; stir to combine.
- Spoon the mixture, from skillet, into a 9 X 13 inch baking dish and sprinkle with remaining cheese.
- Cover and bake for 30 minutes.
- Uncover and bake an additional 10 minutes to melt cheese.
