Mediterranean Skillet with Alfresco Chicken Sausage – a quick and healthy weeknight meal that uses what I like
to call “fast food of choice” pre-cooked chicken sausage!
Flipping through this months Cooking Light I came across an ad from AlFresco Sausage that had the recipe:Mediterranean Skillet with Alfresco Chicken Sausage, so I earmarked it and added to my menu for this week. I knew it would be a winner right off of the bat because it combined fruit, fresh herbs and just enough rice to make the meal substantial. Plus, with a title like: Mediterranean Skillet with Alfresco Chicken Sausage I knew it was bound to be a healthy choice.
I do not eat much sausage but I DO eat Al Fresco brand sausages. Whether grilled and added to a wrap or sauteed with fresh veggies you cannot go wrong. The healthy protein chicken is transformed into several varieties and just this week I saw Al Fresco sausage patties that would be perfect for a quick weeknight grilled meal in addition to this Mediterranean Skillet with Alfresco Chicken Sausage recipe.
This Mediterranean Skillet with Alfresco Chicken Sausage recipe was not only easy but quick. I bought enough to make this twice and that is what I did. Once as the recipe stated and once switching things up and adding a bit of heat. I am sharing the recipe as they wrote it but my modified version adds 1/2 of a small jalapeno, diced, 2 small sweet red peppers, diced and a sprinkling of feta cheese.
Best of all not only is this meal light on the waistline but my kids liked it too!

Ingredients
- 1 pkg of al fresco sweet apple chicken sausage, sliced with casings removed (optional)
- 1 TB olive oil
- 1/3 C sliced green onions, both green and white parts
- 3 dried apricots diced
- 2 C basmati rice, cooked
- 1/2 chicken broth or stock
- 1/4 tsp ground sage, dried
- 1 TB fresh parsley, chopped
- 1 C plain yogurt, I used Chobani
- 1/3 C fresh basil, chopped
- 2/3 C fresh red seedless grapes, sliced in half
- 1/4 C almonds, slivered and roasted, as garnish
Instructions
- In a medium skillet saute scallions for 3-5 minutes on medium heat.
- Add sausage slices and apricots and saute for 3-5 minutes.
- Add rice and broth, simmer 1 minute.
- Add sage and parsley.
- Cook for another 1-2 minutes.
- Mix in yogurt and basil.
- Heat thoroughly 1-2 minutes.
- Season with salt and pepper.
- Fold in grapes.
- Place in serving bowl and top with almonds.
- Serve hot or cold.
Mediterranean Skillet with Alfresco Chicken Sausage is a great recipe to have on hand when you want to make dinner in under 20 minutes and still eat healthy!
