Zucchini Linguine Popcorn Shrimp Scampi

Zucchini Linguine Popcorn Shrimp Scampi is the perfect fancy tasting weeknight meal fake-out. This is a restaurant quality meal you can have on the table in the time it takes to boil pasta. It really IS that easy to make zucchini linguine popcorn shrimp scampi- just don’t tell your family. They don’t need to know!

Zucchini Linguine Popcorn Shrimp Scampi is a meal that hits many of my required notes: it is fast, it requires few ingredients, it is healthy and it tastes amazing! Like you, my time is valuable. We all want to get a healthy meal on the table in a short amount of time that our family will actually eat. This Zucchini Linguine Popcorn Shrimp Scampi recipe is one you will love for all of those reasons.

This quick pasta recipes reminds me of 2 things I love: summer and vacation. Specifically vacation near a coastline. I love having fresh fish and seafood right from the source that is simply prepared in a lemon sauce and tossed with a bit of pasta and veggies. Alas, I live in Indiana. Fresh seafood is sometimes hard to come by. That is where SeaPak Seafood & Shrimp CO. Popcorn Shrimp comes in. They are my fresh from the coast component in this dish!

You can find SeaPak Shrimp & Seafood Co. frozen seafood varieties like Jumbo Butterfly Shrimp, Popcorn Shrimp and Shrimp Scampi in the fresh and frozen seafood area of all grocery stores. Best part- you can quickly integrate their prepared shrimp foods in to any recipe or just heat and serve! That’s my kind of fast food.

I boosted the heartiness of this dish while still keeping it light by spiralizing 2 zucchini’s AKA zoodles. Tossing these in at the end of the dish still keeps them fresh tasting while integrating them into the pasta mix. Best part is you are eating less pasta and more veggies because of this little addition. It helps to pull off the perfect “pasta” fake out if you leave in a bit of the pasta.

Now on to the zucchini linguine popcorn shrimp scampi recipe!

This recipe is kept light and fresh by using few ingredients and nothing heavy. You can prepare the sauce while the pasta cooks and both will be done at the same time. If you do not have a spiralizer of some sort then you can julienne the zucchini or slice thinly on the horizontal.

Did you know?

Shrimp reigns supreme as America’s #1 seafood and, when compared to other sources of protein (such as chicken), this versatile and affordable seafood offers a healthier and leaner alternative.

• The U.S. Department of Agriculture (USDA) recommends that people eat at least two servings of seafood each week. However, the average American consumes less than one serving a week meaning that, to meet recommended consumption, we, as a nation, need to double our seafood intake.

• SeaPak is committed to making life for consumers a little more coastal, by sharing with them the best tastes and experiences of coastal living.

• SeaPak makes it as easy as possible to bring the taste of the coast to the table and to share it with family and friends.

• SeaPak is highly regarded within the seafood industry for its adherence to the utmost quality standards and for its commitment to resource management and sustainability.
