Chicken Olive Hummus Quesadilla for #HummusDay

Hummus Day? There is a day for everything it seems but Hummus Day- this is a day I can celebrate!

What is hummus? Typically it is a paste of ground chickpeas and sesame seeds, olive oil, lemon, and garlic, made originally in the Middle East. I have made dips from black beans, white beans, edamame and more- but I really only call it hummus if it is made from chickpeas. Hummus is perfect on it’s own with some soft pita or pretzels but is amazing as a salad dressing base, sauce on pizza, sandwich spread and so much more!

Classic hummus topped with spinach, diced tomatoes and mozzarella cheese.

One of the best things about hummus, besides the fact that it is amazingly delicious, is that it is very adaptable. As a marinade, as a dip, as a drizzle for veggies- you get the idea.
Here are a few ways a few of my friends use hummus:

One easy way to integrate Sabra Hummus into your menu is by making this simple quesadilla. I used the Olive Tapenade  Hummus. It is a creamy combination of diced olives and smooth hummus. Smear some of this on a hearty tortilla, layer on the cooked chicken, sweet peppers, tomatoes and feta, then heat to perfection. Not only is this a crowd pleaser, but it is a complete meal. Even better- it is amazingly simple. I believe that when you start with good ingredients that you can make a simple dish shine.

Ingredients:

Sabra Hummus- Olive Tapanade

Feta cheese

Sweet peppers, sliced thin

Tomatoes- diced

Cooked chicken breast slices

Toufayan Bakeries- Savory Tomato tortillas

Layer ingredients on 1 tortillas and top with tortilla.

Heat in pan until tortilla is crispy and cheese is melty.

Remove from pan, slice and serve.
