Easy chicken recipes are great for busy weeknights. This is one that I think your family will love as much as mine does. Brown sugar chicken is sweet, crispy, and stick-to-your-fingers delicious.

One of the many things I love to do with my family during the holidays is make edible treats for our friends, teachers, co-workers and coaches.  My kids like to get in on the action, too!  I think they get a sense of satisfaction in making a simple handmade gift, pride in a little bit of happiness that this gift will bring the recipient.

It helps to have a quick dinner recipe in your back pocket for nights when you’ll be busy baking, assembling edible gifts, and wrapping presents. That way prep is quick, easy and can be cleaned up quickly.  One of my favorite easy chicken recipes is Brown Sugar Chicken.  I make this using whatever chicken I have on hand whether it be tenderloins or split breasts.  It’s really good when made using pork tenderloins. You really can’t go wrong with this and the fact that it only has 5 ingredients-PERFECTION!

I adapted this recipe from the original that can be found on my friend Leah’s site, Beyer Beware. She featured this on her Hunk of Meat Monday a few months ago and I knew it would soon make its way into my regular meal rotation!

I served the brown sugar chicken over my spinach and goat cheese risotto.

Brown Sugar Chicken

Chicken breasts are baked up in a mixture of butter, brown sugar, and garlic for a delicious and easy weeknight dinner.

Ingredients

  • 6 boneless skinless chicken breasts OR 6 split breasts
  • 8 cloves of garlic, minced
  • 8 tablespoons of brown sugar
  • 2-3 TB Extra virgin olive oil
  • salt and pepper, the salt really makes a nice contrast to the brown sugar

Instructions

  1. Start by mincing the cloves of garlic and toasting in a small saute pan with extra virgin olive oil.
  2. When the garlic is light brown, remove from the pan and put into a small bowl.
  3. Let the garlic cool a few minutes and then mix in the of brown sugar.
  4. Add salt and pepper and toss to combine.
  5. Then place the chicken breasts in a baking dish.
  6. Then simply sprinkle the brown sugar and garlic mixture over the chicken.
  7. Roast chicken on 450 degrees for 30 minutes or until juices run clear.
  8. While the chicken is cooking the brown sugar will become very bubbly.
  9. When the chicken is done, let it rest in the pan for several minutes before serving.
