Energy Bars for a Busy Day

Now, I know right about now you are asking yourself: Self-Her post is called Energy BARS not BALLS. What is going on here?

Well folks, humidity is.

Last week, when my world was crazytown getting ready to have a camera crew in the house for my first ever on-air cooking segment for Fox59 news, I made a recipe from a new cookbook I got from the Indiana Family of Farmers by Annabel Karmel called Lunch Boxes and Snacks.

I, of course, tweaked this recipe a bit. BUT not enough to make the recipe flop! I later realized that the humidity level in my house was crazy high and that, combined with my impatience to let the bars cool completely before cutting, resulted in a crumbly mess!

I needed an edible prop for my segment so I improvised and rolled it into bite-sized balls! So, I am good in a pinch ????

I think my kids actually liked that better!
