I really wish I had something witty to say about the cole slaw we have been enjoying as of late, but I really don’t have anything to add here.
This is one of the most simple recipes I have in my repertoire. Really. Take a bit of help from the produce section and buy pre-shredded cabbage or broccoli slaw or by all means, shred your own. I am about 50/50. Like everything else, it all depends on whether or not I have time. This is great on a sliced turkey sandwich or with pulled pork!
Light and Easy Cole Slaw
7 -8 cups of shredded green/red cabbage OR bagged broccoli slaw
1/4 C of thinly sliced red onion or shallots
1 C of dried cranberries
1/2 C raw shelled sunflower seeds
1/2 C cider vinegar
1/2 C canola oil
1/3 to 1/2 C sugar (to taste)
a few cranks of fresh pepper and a pinch of salt
1 1/2 tsp celery seed, whole
In a large bowl, add the cabbage, onion or shallot, cranberries and seeds. In another mixing bowl whisk together the remaining items until incorporated. Pour over the salad. Toss to coat. Cover and refrigerate for 2 hours or until well chilled. I like to make this in the morning so it has a chance to sit all day and…well, marry!
