Peanut Butter Banana Oatmeal Honey Cookies – aka Thank You Cookies

Peanut butter banana oatmeal honey cookies are also known as thank you cookies. The cookies are crisp and flavorful, perfect for dunking into a tall glass of milk. They’re the kind of cookies you give to someone who has done something wonderful for you.

And thank you cookies are definitely deserved by quite a few people, including you.

I realized today that I have a lot of people to thank for their support of my “Daily Journal venture”, as I like to call it.  In a million years, I would not have imagined that my writing would appear in a local newspaper.  There are great food writers and food bloggers out there, so I appreciate how hard the job is.

Like many of you, I am just a working Mom.  I am a wife, a sister, your neighbor, your co-worker, and your friend.  My writing isn’t going to change the world, but I hope I shed some light into a little slice of my daily life.

I have been overwhelmed with all of the praise, suggestions and kind words I have received in the last several days in regards to my articles, and as promised, I’m going to bring a few sweet treats to you tomorrow.

I came across this recipe for peanut butter banana oatmeal honey cookies almost a year ago, on the food blog, Two Peas and Their Pod.

The crisp little cookies mimic peanut butter, banana and honey sandwiches, a favorite of mine as a kid.  I happened to have 2 very ripe bananas on the counter, begging to be mashed, so I decided to go with the peanut butter banana oatmeal honey cookies recipe.

If you like softer cookies, then cut the baking time back 4 or 5 minutes.  As per the recipe, they come out a little crisp, and crisp cookies are not for everyone. To avoid the glaze from melting, add it after the cookies have cooled. They just aren’t the same with out it, and the glaze is so delicious, I could eat it straight from a spoon.

Ingredients

  • 1 1/4 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 4 tablespoons unsalted butter, at room temperature
  • 1/2 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 1/3 cup smooth peanut butter
  • 1 tablespoon honey
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 large ripe banana, mashed (about 1 cup)
  • 2 cups old fashioned oats
  • Peanut Butter Honey Glaze:
  • 3 tablespoons smooth peanut butter
  • 1/2 cup powdered sugar
  • 2 tablespoons milk
  • 1 tablespoon honey

Instructions

  1. Preheat the oven to 350 degrees. In a medium bowl, whisk together flour, baking soda, salt, and cinnamon. Set aside.
  2. In the bowl of a stand mixer, combine butter and sugars, mix until smooth. Add peanut butter, honey, vanilla extract, and egg. Combine until smooth. Next, add the banana and mix until combined.
  3. Slowly add in flour mixture until just combined. Stir in the oats.
  4. Drop cookie dough by heaping tablespoonfuls 2 inches apart onto baking sheets that have been lined with parchment paper or Silcone baking mats. Bake at 350 degrees F for 12-15 minutes or until golden. Remove cookies from pans; cool completely on wire racks.
  5. To make the glaze-combine peanut butter, powdered sugar, milk, and honey in a small bowl. Whisk until smooth. If it is too thick or thin, adjust by adding more milk or powdered sugar. Drizzle glaze over cooled cookies.
