Cranberry Shortbread Valentine Day Cookies

Cranberry shortbread cookies are a quick, easy, and delicious treat that is super easy to make. They’re great for Valentines Day, but because of the cranberries in them, they’d be great during the fall holidays, too.

I just have a quick minute, but I wanted to post the picture of these cute cranberry shortbread cookies that I made for the boys as a Valentine’s day gift.  This cranberry shortbread is super easy to make, and very yummy.


Incidentally, if you make shortbread cookies for your kids, you’re entitled to ask for extra hugs. It’s worth the trade-off. ????

Because the shortbread is a Valentine’s Day gift, these cookies are heart-shaped. Obviously, you can use any type of cookie cuter that you like. There are dried cranberries in the shortbread, which makes them a bit fall-inspired, too. If you plan to make them in the fall, consider adding some fall spices to the shortbread dough, such as cinnamon or nutmeg.

Adding a drizzle of white chocolate ganache to the top of the cookies would be delicious, too!

Cranberry Shortbread Cookies

Buttery shortbread with dried cranberries and a dusting of powdered sugar. Perfectly sweet for the sweeties in your life.

Ingredients

  • 1 C unsalted butter, softened to room temp.
  • 1/2 C confectioners sugar
  • 1/4 C coarsely chopped cranberries
  • 1/4 coarsely chopped walnuts (optional in our nut allergy house)
  • 2 C unbleached all-purpose flour
  • pinch of salt

Instructions

  1. Preheat oven to 350 and line 2 baking sheets with parchment paper.
  2. Cream the butter until softened and beat in sugar. Stir in cranberries, walnuts, flour and salt and mix well. Press into a flat disc, cover well with plastic and refrigerate 1 hour.
  3. Roll dough onto a floured surface to a thickness of 1/4 inch. Cut into heart (or desired shape) using all of the dough.
  4. Place on prepared sheets and bake for 15-18 minutes or until edges are browned.
  5. Let cool completely and then dust with powdered sugar.
