Classic French Toast Plus 3 Ways to Make It Healthier

French toast is a classic, easy breakfast recipe that nearly everyone loves.  Fluffy bread, dredged into a cinnamon-spiced egg batter, then cooked on a griddle until it’s golden brown. But depending on the toppings you use, French toast can easily become a plate full of high calories and sugar. I will share some ways to make it healthier, without sacrificing great taste!

I have 2 basic concoctions that I use as the base, adding whatever flavoring I have on hand.  Sometimes pumpkin, peaches, berries, bananas, or even vanilla rum. It depends on the season, what I have on hand, and what I am in the mood for. ????

As an example, apple cinnamon swirl French toast has applesauce and ground cinnamon in the batter.

Another favorite French toast base has a large handful of strawberries and a large banana, pureed and added to the batter. Serve it up with fresh blueberries for a fruit-packed French toast breakfast.

 

I make a simple French toast casserole for Christmas morning every year that is really delicious, too! I top it with fresh strawberries and maple syrup, always buying the best maple syrup I can get my hands on.

To keep things a bit healthier, we typically use sugar-free syrup for every-day French toast.

But every once in a while, I whip out the good stuff, because I hate to save it for special occasions!  For the last year or so I have been using Burtons Maplewood Farms syrup, made in Medora, Indiana.  I like the feeling of using locally made products, and the owner was also The Husband’s first real employer.  It has a very deep, smooth taste without being overwhelming and my kids would drink it if they could!
French toast is also healthier with a sprinkling of milled flax seeds. This adds a healthy “oomph” of fiber, and your kids won’t even notice it! Before grilling, sprinkle the flax onto the batter-soaked bread.
I make this every week, freezing the leftovers (if we have them) for lunches.  I make banana or pumpkin French toast the most.  If you go the pumpkin route, add a little pumpkin pie spice.  It is amazing!

Sprinkle milled flax seed onto the batter-soaked bread before grilling it.

This French toast variation has 1/4 cup of applesauce and a mashed banana in the batter.

Serve it with your family’s favorite toppings and sides. My family loves it with crunchy no-bake granola bites and fruit salad.

Ingredients

  • 1 loaf sliced bread. Use good quality Challah, white butter top, or flavored swirl breads.
  • 12 large eggs. I just use 3 of the yolks but all of the whites.  I know this is wasteful, but I like the taste better. Remember, I am not an egg lover.  Use whole eggs if you like.
  • 1/2 tsp ground cinnamon (more or less, if desired)
  • 1 TB honey (or sweetener of choice)
  • 1 tsp vanilla extract
  • 1 TB milk
  • Add ins of choice**
  • 2 TB butter or non-stick cooking spray

Instructions

  1. Preheat electric griddle or frying pan. I use a large electric griddle so I can cook 10 slices at a time.
  2. Whisk all ingredients together in a large, shallow dish so you can easily dredge the bread 1 slice at a time.
  3. Dredge each slice into the egg batter, making sure to get batter onto both sides of the bread slices.
  4. Melt 1 tablespoon of butter onto the heated griddle, or spray with cooking spray.
  5. Add dredged bread slices to griddle and allow them to cook at medium heat for 3 minutes per side, or until bread has turned golden brown and no raw egg batter exists.

Important Notes

**Typical add ins:  a handful of pureed strawberries with 1 banana, 1 mashed banana, 1/3 C pumpkin puree, 1 pureed peach, 1 pureed pear, 1/2 cup of applesauce…I could go on and on.
