BBQ bacon meatloaf is a family friendly, comfort food dinner! Made in an Instant Pot or pressure cooker, you can make this easy recipe in only 25 minutes!
I have another delicious Instant Pot recipe to share with you, and I think it is the most delicious meatloaf ever! In addition to red sauce smothered burritos, this BBQ bacon meatloaf recipe is one of my favorite Instant Pot recipes. One reason for that is because the finished meatloaf comes out so moist! Meatloaf is easy to over cook in an oven, but using an Instant Pot takes the guesswork out of how long it should cook. Plus, cleaning the IP is much quicker and easier than scrubbing a loaf pan.
Just like the burritos, this meatloaf recipe is inspired by one from Barbara, at Pressure Cooking Today. Her BBQ bacon meatloaf recipe is incredibly delicious!

Prepping the BBQ bacon meatloaf to be cooked is easy, too.
You will need a long, thick strip of aluminum foil, doubled over. The foil strip should be 17 inches long and 8 inches wide. It will become a harness, cradling the meatloaf above the water in the IP as it cooks.
Place the foil into the Instant Pot like this:
The foil harness will keep the BBQ bacon meatloaf from getting wet as it cooks in the IP.
When you make the meatloaf, you can use any type of barbecue sauce you like. I like the extra smoky kick of spice that the adobo BBQ sauce from Best Boy and Co has, so that’s what I use.
I served the meatloaf with mashed potatoes and mixed steamed vegetables, with apple crisp for dessert.

Ingredients
- 1/2 C milk
- 3 slices bread (white or wheat)
- 2 lbs ground beef
- 3/4 C grated Parmesan cheese
- 1 tsp salt
- 1/4 tsp seasoned salt
- ground black pepper
- 2 TB dried parsley
- 3 large eggs, beaten
- 8 bacon slices of pre-cooked bacon
- 1/2 cup BBQ sauce (I used Best Boy and Co. Adobo BBQ Sauce), divided
Instructions
- In a mixing bowl, pour the milk over the bread and allow it to soak for several minutes.
- Add the ground beef, Parmesan cheese, salt, seasoned salt, black pepper, parsley and beaten eggs. Use your hands to fold the ingredients together, just until well combined.
- Fold a sheet of tin foil into a 16-inch long by 7 inch wide strip. Shape the meat mixture into a loaf in the center of the strip. Lay the bacon slices over the top, tucking them underneath the meatloaf. Spread 1/4 cup BBQ sauce on top of the bacon.
- Place a trivet into the bottom of the pressure cooking pot and add 2 cups of water. Place the meatloaf on the aluminum foil strip onto the trivet.
- Lock the lid in place and select high pressure and 20 minutes of cooking time. When timer beeps, turn off pressure cooker and do a quick pressure release.
- Remove meatloaf from the pressure cooker and turn on your oven’s broiler. Place the meatloaf onto a broiler pan. Spread remaining 1/4 cup BBQ sauce over the meatloaf. Broil for about 5 minutes, or until the BBQ sauce starts caramelize.
Important Notes
If your meatloaf is taller than it is wide, it may need a few minutes longer to cook. Before removing the meatloaf, use an instant read thermometer to check and see if the center has reached 155 degrees F. If not, just lock the lid back in place and cook it for a few more minutes.
