Thai Beef Lettuce Wraps

Lettuce wraps are a healthy way to have a meal without heavy, starchy carbohydrates involved. A lettuce wrap lets you cut back on the calories, too. These Thai beef lettuce wraps are easy to make and really delicious!

I don’t know what was more exciting last week….the fact that I finally made a version of my lettuce wraps so good that my family actually gave me a round of applause or that I found an app for my iPhone that takes awesome pictures!  It is a close tie ????

These wraps are super easy to make but do require a few different ingredients.  I was able to find them readily available at my local Meijer and Marsh grocery stores.  I usually make a double batch of this so we have leftovers because it is even better then next day!

My kids like to call these ‘Thai Sloppy Joes’ since the consistency is similar.  I had planned on posting this next week but after emailing the recipe to 4 people I thought this is nonsense!  I just needed to post the dang thing!

These lettuce wraps couldn’t be any more simple to make, and it is a fun dish that is packed full of flavor. And so delicious, too! There are no ‘chunks’, so my picky eater devoured them.

Plus, my kids thought it was fun to eat their dinner wrapped in lettuce.  I like to use butter lettuce, or a little spear of romaine for my wraps, but you can use whatever is on sale.

Ingredients

  • 1 Tbl cooking oil (I used sesame oil)
  • 1 C thinly sliced leeks
  • 2 cloves garlic, minced
  • 1 lb lean ground beef
  • 1 tsp red curry paste (I used Thai Kitchen brand)
  • 1 C tomato sauce
  • 1/2 C light coconut milk
  • 1 Tbl brown sugar
  • 1/4 tsp lime zest
  • 1 1/2 Tbl lime juice
  • 1 Tbl fish sauce
  • 3 C cooked Jasmine rice
  • garnish options: lettuce, lime wedges, cilantro, green onions,sesame seeds

Instructions

  1. Heat oil in a medium sized skillet over medium heat.
  2. Add leeks and garlic and saute until tender, 5 min.
  3. Add beef and cook, crumbling, until browned. Add the curry paste and tomato sauce; Cook until liquid reduces by half.
  4. Add milk and next 4 ingredients (through fish sauce). Cook until thickened.
  5. Portion into lettuce leaves and serve warm.
