Making slow cooker ham soup is a great way to use up leftovers from a holiday meal. This recipe adds a lot of flavor and fiber, from the use of Hurst 15-bean soup mix.

My mom always made ham and bean soup after Easter. I never loved it, but I ate it. It just seemed blah to me and just a reason for her to use up the leftover ham. With nine kids, she always made use of everything. My little family has never loved bean soup, and I don’t make it often due to that fact. Once in a while a little part of me craves it just out of nostalgia.

A few weeks ago my six-year-old daughter changed my mind after a sleepover at her best friends. Her friend’s dad had made a slow cooker ham soup that day and baby girl couldn’t get enough. As a hunter, this man knows how to cook hearty, stick to your ribs food. He amazes me all the time!

Baby girl particularly raved about his ham and bean soup, and she won’t even eat the beans in her chili! With such a glowing review, I had to find out what was in it, and try my hand at a pot with our leftover ham from this Easter.

I was amazed to find out it was a fairly simple recipe, but the wow factor was definitely in the small touches, for example sautéing the veggies in bacon grease and boiling the heck out of the ham before putting it in the Crockpot!

I hope your family enjoys this soup as much as mine did. True to my roots, I love to serve it with simple corn bread. I’m a Jiffy girl, but Basilmomma has great recipes for quick breads.

Slow Cooker Ham Soup with Hurst Beans

This 15-bean soup is made with cooked ham, so it’s a great use for leftovers from a holiday meal. It slow cooks on low all day, so you’re able to set it up in the morning and come home to a great dinner full of fiber and flavor.

Ingredients

  • Dry 15 Bean Soup Starter (Basilmomma advises Hurst’s Beans are the best!)
  • Cooked ham, cut into cubes
  • Ham bone
  • 3 C Chicken Broth
  • 3 C Water
  • Small Onion, finely chopped
  • 1 C Carrots, finely chopped
  • Salt, to taste
  • Pepper, to taste
  • 2 Tbl bacon grease

Instructions

  1. Rinse and soak beans overnight, at least 8 hours or until soft.
  2. After soak, drain beans.
  3. Sauté finely chopped onion and carrots in bacon grease, add cubed ham in too.
  4. On stove top bring chicken broth, water, drained beans, onion, carrot, cubed ham and ham bone to a boil. Simmer 1-2 hour(s), depending on beans.
  5. Remove ham bone.
  6. Move soup over to slow cooker and simmer on low for 4-6 hours.
  7. Add salt and pepper to taste.
