This bacon, sweet potato and pomegranate power bowl is one heck of a power food recipe. Sweet potatoes, spinach, shallots, goat cheese, pomegranate arils and- BACON! How could you go wrong? This is a healthy meal disguised as a naughty one. Don’t worry- I won’t tell ????
I made bacon, sweet potato and pomegranate power bowl recently at the Indianapolis Home Show and man- was it ever a hit! I made this recipe times 3 and every last little bit was sampled out. I handed out almost 100 recipe cards not to mention samples of cooked Maple Leaf Farms duck bacon. People loved the fact that it tasted great AND was lower in fat than traditional bacon. I loved that I made what amounted to a salad with bacon and cheese and it met all of my nutritional goals without going over. BOOM.

This is one heck of a power food recipe. Sweet potatoes, spinach, shallots, goat cheese, pomegranate arils and- BACON! How could you go wrong?

Ingredients
- 1/2 lb Maple Leaf Farms duck bacon
- 2 lg shallots, diced
- 2 sweet potatoes, peeled and diced small
- 2 TB butter
- 1 Tb pure maple syrup
- 1/3 tsp dried chipotle pepper
- 10-12 oz fresh baby spinach
- 4 oz crumbled goat cheese
- 2 C cooked farro
- 1/2 C pomegranate arils
Instructions
- In a skillet cook the bacon until crisp, remove from pan.
- Add butter and sweet potatoes, saute until soft.
- Add shallots, chipotle pepper, pinch kosher salt, fresh black pepper and maple syrup.
- Saute until shallots are soft, on medium heat.
- Remove from heat.
- Fold in fresh spinach and cooked farro.
- Divide evenly in 4 bowls and top with goat cheese and pomegranate arils.
