Tex-Mex Chicken Burrito Bowl

Whether you are getting reacquainted with your back to school routine or your schedule is a hectic one, chances are that you need a few recipe ideas to maximize the time you have to get a meal on the table. Today, I am sharing one of my favorite meal ideas. This Tex-Mex Chicken Burrito Bowl is a favorite in our house as it is a twist on my husbands signature dish- taco salad.

This meal is satisfying in so many ways and doesn’t load on the calories and fat. I prepared all of the ingredients at the same time so that it all could be assembled quickly. I took advantage of a few great sales at Meijer by using both the in-store ad as well as their mPerks app on my phone. You can also use any applicable coupons for even more savings, I just didn’t happen to have any on this particular shopping trip.

I am not sharing this recipe in the typical manner I usually do so that I can detail the steps I took to make this and in what order.

Tex-Mex Chicken Burrito Bowl

Ingredients:

1 lb boneless skinless chicken breasts

zest of 1 lime

salt/pepper

4 ears of corn

4 oz BBQ sauce

4 oz sour cream or Greek yogurt

Creamy Avocado Sauce

1 small tomato, diced

1 can black beans, rinsed and drained

2 C of cooked brown rice

6 C of romaine lettuce, chopped

4 ears of corn, with husk still on

tortilla strips or chips

Steps:

Preheat oven to 350 degrees (alternately you could grill the chicken or pan saute it).

Cover a sheet pan with foil and place the chicken on it.

Dust chicken with salt, pepper and lime zest.

Bake until cooked- which depends on the size of your chicken (30 minutes roughly)

While chicken is cooking, place ears of corn, 2 at a time, in the microwave for 3 minutes.

Allow to cool and remove husk and silks, cut kernals off of cob.

Make creamy avocado sauce.

Rinse and drain black beans.

Thinly slice chicken.

Layer each ingredient evenly amongst 4 bowls or plates ,starting with lettuce.

Top with tortilla strips.

Drizzle with bbq sauce, sour cream and creamy avocado sauce.
