Let me say this again- you will be making this a LOT this summer. There are so many flavors in this light and refreshing grape, tomato and mint salad that all work together to give you one perfect bite. Sweet, tangy, crunchy- it just works. Best part is that it is healthy so you don’t feel so bad when you eat the entire recipe in 2 days!

I wouldn’t have this joy in a bowl were it not for Alice Phillips. To me she is Ally of Ally’s Kitchen, a renowned food and travel website that I have come to know and love over the years. I had been writing about food both publicly and privately for about a year before I discovered Ally. I was immediately drawn to her no nonsense approach to eating, cooking and living.  She is a mother, a wife, a grandmother, a world traveler, a writer, an actress and an accomplished cook. I once spoke to her on the phone and something she said stuck with me because I feel the same way. She said that being a mother and a wife is not all that you are. It’s what makes you better or drives you. You can still be YOU and be what you are meant to be. Years later I still hear her eloquent southern drawl in my ear saying this.

She is passionate. She is a cheerleader- but she is also a leader. She builds up a community and shares it with her fans and friends. I have come to think they are one and the same.

Now back to that salad. This is a simple preparation and is best made as the recipe states. But like all things Ally (and me for that matter) make adjustments as you see fit. Be creative!

Don’t leave out the lemon zest in this recipe. It really makes it POP! Don’t have a zester (my FAVORITE kitchen tool)? I bought this low-cost ($12) Microplane Zester from Zesco.com.

This not only makes a great salad but also a cool topping for grilled fish, chicken or pork.

Refrigerate for an hour before serving to let flavors meld.

Ingredients

  • 1 1/2 C diced Roma or Campari tomatoes (I used sweet grape)
  • 1/2 C diced red onion
  • 1 1/2 C sliced red or green grapes
  • 1 heaping TB of chopped fresh mint
  • zest and juice of 1/2 lemon
  • 1/4 C olive oil
  • sea salt (to taste)
  • Fresh black pepper (to taste)

Instructions

  1. Whisk lemon zest, juice and oil in a serving bowl.
  2. Toss in grapes, tomatoes, onion and mint.
  3. Taste for seasoning.
  4. Serve.
