White Bean and Spinach Pizza- a Little Red Door Cancer Agency – Door to Wellness Recipe

This month for the Door to Wellness cooking class I decided to take a popular food, pizza, and give it a healthy face lift. We all probably like pizza, but it doesn’t necessarily like us! It can quickly pack on the calories and fat and before you know it you have eaten the equivalent of 2 Big Macs!

But I like to have my “pie” and eat it too, so the losing the excess calories and fat makes this white bean and spinach pizza a meal I can sink my teeth into. Not to mention this is an easy and budget friendly meal- so what better recipe to share with the class?

We had a great time in class and it was really a collaboration of ideas, stories and some great fellowship. Learning how to prepare a meal together, which we fed to all of the clients in attendance, then sharing the white bean and spinach pizza for lunch together as a group is definitely the highlight of my week. I can’t wait until next month! I will be there every month in 2015. I am beyond humbled to have been asked and appreciate the new friends I will make there!

The white bean and spinach pizza recipe is easy, healthy, and delicious!

Serving Size 1/8 pizza

White Bean and Spinach Pizza

White beans, spinach, and tomatoes baked onto a whole wheat pizza crust, topped with low fat cheese.

Ingredients

  • 12-14 inch prepared whole wheat pizza crust
  • 15 oz canned great northern beans, rinsed and drained
  • 2 cloves garlic, minced
  • 1 tsp dried Italian seasoning
  • 1 small bag (10 oz size) of pre-washed baby spinach OR 2 packed cups, chopped
  • 15 oz canned petite diced tomatoes, drained well
  • 1 C of cheddar or Italian blend cheese

Instructions

  1. Heat oven to 425 degrees F.
  2. Place beans, garlic and Italian seasoning in a small food processor and pulse to combine. Alternately, if you do not have a food processor you can mash these ingredients in a bowl with a potato masher.
  3. Spread bean mixture over crust, evenly distribute the spinach and tomatoes, and dust with cheese.
  4. Bake for 8-10 minutes or until cheese is melted.

Little Red Door provides a great service to those who need help, guidance, and more in Central Indiana. Like many service organizations, there is a need at LRDCA for items to stock the kitchen for these classes. New or gently used kitchen appliances (large and small), linens, serving pieces, silverware, knives and other assorted cooking equipment that you no longer need would be greatly appreciated. These cooking classes teach the clients of LRDCA as well as their caregivers how to prepare economical and healthy meals.

Each class has between 10-12 attendees which create a meal with the teacher (me) to serve for the 30+ guests that day for lunch. This is a valuable experience on so many levels and I for one am a better person being a part of this.
