Creamy One Skillet Baked Spaghetti is quite possibly one my favorite things I have made in a long time! You just can’t beat one skillet meal recipes!
Just today the woman who does my hair told me that I need to do a little cookbook (maybe an E-book) that focuses on skillet meals. I might just do that because this week alone I have made 3- all with the express purpose of sharing recipes for ‘real food that real people eat’ with you all. That and we had to have dinner- so there’s that.

But she had a point. So often seemingly simple recipes turn out to be a hot mess. Literally and figuratively. There are few things worse, in the kitchen that is, than cooking a meal that was labor intensive that no one likes. Wasted time AND money.
Here is my last (almost) one skillet meal: baked gnocchi with sausage and peppers
Last week I had FOUR WHOLE HOURS where I had to sit somewhere and rather than play on my phone I brought the new Cook’s Illustrated
What I have now is quite possibly going to be the only baked spaghetti recipe I ever use again. You just can’t beat the fact that you cook it ALL in the one skillet and then pop it under the broiler. Creamy one skillet baked spaghetti takes 2 of the 3 possible dishes you will have to wash out of the equation- since you can literally make this all in one skillet. While it is cooking on the stove top you can make a quick side veggie and a salad.
This is the quintessential 30 minute one-skillet meal. Everything you love about baked spaghetti with out all of the dirty pots to clean up! Adapted from Cook’s Illustrated. Note: The last time I made this I found ‘broken’ spaghetti by Creamette at the grocery and used it.Worked like a charm.It’s just literally pre-broken noodles.
Ingredients
- 1 pound very lean ground beef, I used Laura’s Lean Ground Beef
- 1 pound ground Italian Sausage
- 4 cloves garlic, minced
- 1/4 tsp red pepper flakes
- 1/2 tsp dried oregano
- 1 tsp dried basil
- 1 tsp dried Italian seasoning
- 1 28 oz can of crushed tomatoes, I used Red Gold Tomatoes
- 8 oz (1/2 of box) of spaghetti, broken into 2 inch (roughly) pieces.
- 2 1/4 C water
- 1 1/2 tsp salt
- fresh black pepper
- 2 C shredded Italian blend cheese
- 1/4 C heavy cream (add a TB more if you want a bit of extra creaminess)
Instructions
- Brown the meats in a large, flat bottomed skillet.
- Stir in the garlic, red pepper flakes, seasonings and cook for 30 seconds.
- Stir in the water, sauce, salt/pepper and pasta.
- Cover and cook on medium until the pasta begins to soften, about 7 minutes.
- Reduce heat to medium-low and simmer until pasta is soft enough to your liking, about 6-7 minutes.
- Stir in 1 C of cheese and the cream.
- Top with remaining cheese.
- Place under a hot broiler for about a minute, or until cheese is lightly browned and melted.
- Keep an eye on it.
- Serve
