Turkey Parmesan crescent roll ups are a quick and easy, portable, healthy meal for lunch, dinner, or even game day snacks. Great way to use up your Thanksgiving leftover turkey, too!

This is the time of year when your kids, or grand kids, will be home on holiday break. If they are like my kids, they will be hungry. All. Day. Long.
This simple and hearty recipe for turkey Parmesan roll ups is perfect for lunch or dinner. You can even make them ahead, reheating in the oven when you’re ready to eat. This is something we make a lot, because my boys never grow tired of it.

Turkey Parmesan crescent roll ups are one of the most versatile and family friendly recipes I have in my arsenal. See, my kids are odd. They do not like cold sandwiches. By that, I mean that lunch meat with cheese is not one of their favorite meals to have. But sometimes our schedule dictates that we are eating ham and cheese roll ups or tortillas stuffed with turkey and string cheese. In my opinion, it is quick and very portable.

But I trick them a little bit. I make little roll ups, stuffed full of things they like. I bake them until the cheese is melted and the dough is lightly browned, give them a dipping sauce, and call it a day. They are happy, and I have made a healthy meal the the whole family loves. It’s a win-win.

Recently, I visited Ohio’s Cooper Farms with my family. While there, we learned more about what I can assume is one of the largest, family-owned turkey farms in the country. Cooper Farms supplies turkey for all of the Private Selection (Kroger) turkey east of the Mississippi River, all of the turkey for Bob Evan’s, as well as turkey burgers for Chili’s, Trader Joe’s and so much more. Their products are of a high quality that is sought after and highly regarded. I brought home a sample pack of products, and the next day, we dug right in.

In my favorite roll ups recipe, I used the Columbus brand of sliced turkey with herbs – available at Kroger and many other stores in the Midwest. It is ready straight from the package to use and the herbs just lend to more flavor in this recipe.

I used sliced mozzarella, grated Parmesan, and a can of crescent roll dough. Pretty simple, huh? Then I made a dipping sauce of diced tomatoes with basil garlic and oregano from Red Gold Tomatoes, then added a 1/2 tsp of red pepper flakes to give it a little zip. 15 minutes and it’s ready.

Instructions

  1. Preheat oven to 350 degrees.
  2. Line a baking sheet with parchment paper.
  3. Lay out sheet of crescent roll triangles into 4 rectangles (keeping sets of 2 triangles together to form this).
  4. Layer the cheeses and turkey- 2 slices of cheese and turkey on each rectangle.
  5. Evenly distribute Parmesan cheese on each.
  6. Roll up and place, seam side down, on baking sheet.
  7. Brush with melted butter.
  8. Dust with dried Italian herbs.
  9. Bake at 350 for 15-17 minutes or until dough is completely baked and they are light brown.
  10. Remove from oven and allow to cool.
    For the dipping sauce
  11. Combine diced tomatoes and red pepper flakes in a small saucepan or microwavable bowl.
  12. Heat and serve as a dipping sauce.
  13. This recipe can be easily doubled.
