Bacon Apple Gouda Pita Snacks

 

Having an arsenal of ingredients on hand so you can throw together a light meal or snack in a flash is essential, in my opinion. Not only do my kids come home from school/practice hungry, there are all of the snacks and lunches in between.

One of my favorite ways to snack is putting something on a pita or in a tortilla. It’s an efficient way to wrap or hold just about anything. In the last 16 months I have been sharing recipes made using a line of tortillas and pitas (and so much more) from Toufayan Bakeries. I have enjoyed getting to know this company a bit better and eating really well along the way. If you are looking for high quality gluten-free foods then I suggest you visit their website. They make so much more than just gluten-free and the pitettes I used for this recipe are not GF.

These pitettes are a smaller version of a full sized pita. I like this because it screams portion control to me. It is just big enough to make a filling meal for my kids (and their mom) and that is all I need for these bacon apple Gouda pita snacks.

You can’t beat the combo of apples and cheese together. Add bacon and this is delightful. I made these in the toaster oven and taught my kids this recipe as well. If you want to bulk this up a bit you can add a layer of sliced turkey as well. My son suggested, and he had a good point, to add a bit of cheese as a first layer to keep the toppings on once melted. I like this idea!

Ingredients

  • 6 pitettes from Toufayan Bakeries or other small sized pitas
  • 2 C of shredded Gouda cheese
  • 1 sweet apple- I used a large Gala- sliced into thin wedges
  • 6 strips of bacon, cooked and drained

Instructions

  1. Preheat oven to 350 degrees.
  2. Place the pitas on a baking sheet.
  3. On each one layer on a few slices of apple, 1 strip of bacon (broken in half to fit) and a bit of cheese.
  4. Place in oven and bake until cheese is melted- about 5 minutes.
