{I love it when I can make something that is not only yummy but not adding inches to my waistline!  I think I have finally refined a recipe I have been working on and now I don’t even feel bad for feeding this to my kids..well..everyday!!  Wonder what I am talking about?

                                         Ice cream!!

Yes, that’s what I said.  Ice cream!  I have now made this 11 times this summer.  It’s easy, naturally sweet and best of all….drum roll…..it’s made with ONLY FRUIT!!  No cream (I know the ice cream was a little misleading), no sugar and it’s wonderful!

I don’t know if any of you remember when Bill Cosby taped a stand-up comedy movie called Himself in the early 80’s?  He tells a story of feeding his kids cake for breakfast and to thank him they sang a little song: “Dad is great! He gives us chocolate cake!”  Well, I thought that was so funny!

So when I told the boys this week I had finally gotten my ‘Ice Cream’ recipe right and we were going to have it for breakfast they wanted to know what the catch was.  Did it have tofu?  Did I hide cruciferous vegetables in it?  I have done that..they are no fools ????  I told them I just wanted to live a little.  They agreed none the wiser.  They think they are getting dessert for breakfast and only I know that it is ALL fruit.  Nothing more ???? }

Mango-Grape-Banana Sorbet

10 ounce bag of frozen unsweetened mango chunks
1 C frozen red grapes
1 large ripe banana
1/4 C freshly squeezed orange juice (or from a carton if you have it)
pinch of salt (odd, I know, but it made a difference in the sweetness of the fruit)

In a food processor, combine all ingredients.  Process until very smooth, about 2 or 3 minutes.  You may need to stop and scrape it down.  Serve immediately or pour into Popsicle molds.  It will have the consistency of soft serve.  I have even added a cup of vanilla fat free yogurt to it and it works too!

I love this..The Husband didn’t believe it didn’t have any cream in it until he watched me make it ????
