It’s almost race time Ladies and Gentlemen! The Indianapolis 500 is the last Sunday in May and to kick of the month of racing there is a great event coming up to celebrate food and the sport of racing- Rev Indy.

I will be there with Clabber Girl serving their Strawberry Pina Colada Pie to lucky attendees. Even better the pie will be served by Indy Car driver Al Unser Sr! Below you will see the recipe for this mouthwatering pie and a bit of history about Clabber Girl and the inaugural event- Rev indy!

Clabber Girl Corporation grew from the original business that was incorporated over 150 years ago. Hulman & Company began in Terre Haute, Indiana in early 1850. Originally a wholesale grocery store, the business expanded into manufacturing with the addition of a storeroom and spice mill behind the store in 1869. The company continued to expand and by 1879 was manufacturing a variety of products, including spices, coffees, and baking powder under many different brand names. By 1899 Clabber brand baking powder was introduced, and today the Clabber Girl brand, as renamed in 1923, is distributed nationwide and to many different countries around the world.

Although the original wholesale business closed its doors in the 1990’s, Clabber Girl Corporation has continued to expand its product lines and now distributes retail, wholesale and industrial size baking powder under many different brand names. 

Clabber Girl Baking Powder has been a trusted ingredient in home kitchens since 1899. Located in Terre Haute, Indiana, Clabber Girl boasts a production facility, historical museum and restaurant/gift shop.  They now offer several baking powder brands and have introduced corn starch to their product offerings in 2002.

A family owned business, Clabber Girl’s parent company, Hulman & Company, also owns the Indianapolis Motor Speedway.

Strawberry Pina Colada Pie with Snickerdoodle Crust

Ingredients

  • Snickerdoodle Crust
  • 2 ¾ cup all-purpose flour
  • 2 tsp. cream of tartar
  • 1 tsp. baking soda
  • ¼ tsp. salt
  • ¼ tsp. cinnamon
  • 1 ½ c. granulated sugar
  • ½. Butter, room temperature
  • ½ c. shortening
  • ½ tsp. vanilla
  • 2 large eggs
  • 3 tbsp. whole milk
  • (to roll dough in-mix together in small bowl)
  • 3 tbsp. granulated sugar
  • 3 tsp. cinnamon
  • PIE FILLING:
  • 8 oz. cream cheese (softened)
  • 2 oz. milk
  • Coconut Cream Pudding (3.4oz. box)
  • 8 oz. crushed pineapple (undrained)
  • 1. oz. Pecans (chopped)
  • 2 Cups Cool Whip
  • ¼ cup coconut flakes (toasted)
  • 1/14 cup sliced strawberries (may be sweetened with sugar if desired)

Instructions

  1. Preheat oven to 375 degrees.
  2. In the bowl with mixer, beat butter and shortening on medium-high speed for 1 minute, until smooth and creamy. Add sugar and beat until fluffy. Add eggs, mixing after each addition them milk and vanilla.
  3. In a medium bowl, whisk together flour, soda, cream of tartar, salt and cinnamon.
  4. Set mixer at low speed, slowly add dry ingredients to butter mixture. Mix until combined.
  5. Chill dough for 1 hour. Once dough is chilled. Scoop out 1 ¼ cups of dough and press into bottom and half way up side of 9×9 square or 9-inch pie pan.
  6. Sprinkle generously with cinnamon sugar mixture
  7. Bake at 375 degrees for 10-15 minutes or until done.
  8. Let crust cool completely before adding pie filling.
  9. You can scoop out the rest of the dough and roll in cinnamon sugar to make snickerdoodle cookies or make an extra crust.
  10. Filling:
  11. In a mixing bowl, beat cream cheese and milk until blended
  12. Add dry pudding mix and pineapple, beat for 2 minutes
  13. Add in whipping cream and pecans, mix until just combined
  14. Pour into prepared snickerdoodle crust
  15. Refrigerate until firm(at least 3 hours)
  16. Garnish with strawberries in center of pie, then pipe outside the strawberries with cool whip
  17. Garnish with toasted coconut flakes on piped cool whip
  18. Keep refrigerated
