Homestyle Country Sausage!

When it comes to sausage, it can get pretty boring. Secret: My youngest son and I are not fans of pre-blended sausage. Simply put- I like to make my own. I am weird like that. I won’t get in to all of the things I don’t eat for weird reasons today ????

This recipe is going to be my new swim breakfast meat recipe. For one thing it can easily, and quite affordably, be multiplied to feed a crowd. For another, it is a healthy alternative to greasy preformed sausage rounds. With the addition of shredded apple and brown rice, this is a filling way to start the day. Don’t like or eat rice? Add another one of your favorite cooked grains. This would be great with barley or quinoa.

Homestyle Country Sausage

Ingredients

  • 1 tart apple, peeled, cored, and shredded
  • 1/2 C cooked brown rice
  • 2 TB onion, shredded
  • 2 cloves garlic, minced
  • 1 1/2 tsp dried sage
  • 1/2 tsp dried thyme
  • 1/8 tsp allspice
  • 1 tsp salt
  • 1/2 tsp pepper
  • optional: 1/8 tsp cayenne
  • 1 lb lean ground turkey

Instructions

  1. In a large bowl, combine apple, onion, rice, garlic and seasonings.
  2. Crumble turkey into apple mixture and mix well.
  3. Form into 8 patties, 1/2 inch thick.
  4. Cover a broiler pan with foil and spray with non-stick spray.
  5. Place patties on pan.
  6. Broil for 4-6 minutes on each side or until juices run clear.
  7. Makes 8 servings.
