Did you catch me on IndyStyle today? It’s OK if you missed it, because I know many of you do NOT live in Indiana. But one of the great things about the internet is I can share my segments with you all here and you can enjoy anywhere.

Earlier this week, I shared a few of the many food artisans Indiana has to offer (the post is HERE). Well, I used 2 of the products to make a few tasty recipes. One is a family favorite- mustard chicken salad, and the other is a summer cocktail that I found on the back of a product label.

If I have said this once I have said it twenty times: sometimes the BEST recipes for certain products are in fact on that product’s label!

First up is a very simple mustard chicken salad, kicked up a notch with Best Boy and CO deli-mustard. This Indiana Artisan makes small batches of the mustard, using only a handful of ingredients. I served this tangy salad in a soft, yet oh so durable pita from Toufayan Bakeries. Finally, pitas that don’t rip when you fill them!

Mustard chicken salad is perfect for potluck meals, too. Here’s the recipe!

Mustard Chicken Salad

Ingredients

  • 1 lb of cooked chicken (cubed) cook yourself or use rotisserie
  • 1 celery stalk, diced
  • 1/2 tsp dried thyme
  • a pinch of dried rosemary
  • 1 C of red grapes, sliced in half
  • 2 TB of chopped walnuts (toasting optional)
  • 1/2 C of mayonnaise or plain greek yogurt
  • 2 heaping TB of Best Boy and Co deli-mustard
  • pinch salt/black pepper
  • lettuce leaves to garnish
  • 4 pitas ( I used Toufayan Bakeries )

Instructions

  1. Combine all ingredients except for pitas in a serving bowl.
  2. Allow to chill 2 hours.
  3. Serve in pitas, as suggested, or as a sandwich on bread or buns, or top some healthy salad greens with a scoop of the mustard potato salad..

Using Sage’s Simple Syrup Cucumber Basil, I made 2 of their signature drinks. One of them is a cucumber basil aqua fresca. It’s a non-alcoholic mocktail that is refreshing and delicious!
