I am always looking for ways to cut down on the ingredients I need to buy when making this or that. The way I see it: I am a pretty fantastic multi-tasker and I look for the same qualities in my food ingredients as well. I mean, who wants to buy odds and ends that they may never use again? We don’t have ANY time (or money) for that!
The story: my kids had a craving for chocolate ice cream. Not the ‘out of the carton‘ kind, but the rich homemade kind that only mom can make.
The problem: I had absolutely NO chocolate in the house. There is a reason for this. If we have it we will eat it. Pure and simple.
The solution: I used something I have in my refrigerator that I had, until this day, only used in my smoothies, coffee and baked goods.
International Delight Coffee Creamer! Folks, you may already know this but this creamer makes a pretty fantastic base for ice cream. No additional ingredients needed other that whole milk. No added sugar, vanilla or-what have you. This is one of the easiest and quickest ice cream recipes I have-and I have many. All you need is an ice cream maker. I am sure you can improvise~ but this recipe uses an electric maker.

This is the simplest ice cream you’ll ever make. 2 ingredients will give you a creamy, cold, delicious chocolate caramel ice cream dessert!

Ingredients
- 2 C of Chocolate Carmel International Delight Coffee Creamer, very cold
- 1 C of whole milk, very cold
Instructions
- Whisk both to combine.
- Add to the container of an ice cream maker.
- Process until frozen to your desired consistency.
- If it is not firm enough for you then add to a clean, freezer safe container and cover tightly.
- Freeze until you reach the desired texture or serve right away if you like it ‘softer’.
- Enjoy!
