A great pantry meal is hard to beat.  This soup can be made using what you may already have on hand in your freezer or pantry.  Even better- I had this made in 20 minutes! Now THAT is my kind of lunch! Perfect for summer break when it’s just the 3 of us.

 

A-to-Z Vegetable Soup

Ingredients

  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1-2 TB olive oil
  • 1-2 TB Italian seasoning
  • 3 14 1/2 oz cans of beef OR vegetable broth
  • 12 oz can diced tomatoes
  • 16 oz package frozen mixed vegetables
  • 1/2 C alphabet pasta
  • salt and pepper to taste
  • chopped parsley as garnish

Instructions

  1. In a large soup pot over medium heat, saute the onion and garlic until opaque.
  2. Add seasoning to taste.
  3. Add broth and undrained tomatoes.
  4. Bring to a boil.
  5. Stir in frozen vegetables and pasta.
  6. Cover and simmer until pasta is tender, about 10-12 minutes.
  7. Add salt and pepper.
  8. Add 1 TB parsley, optional.
