A great pantry meal is hard to beat. This soup can be made using what you may already have on hand in your freezer or pantry. Even better- I had this made in 20 minutes! Now THAT is my kind of lunch! Perfect for summer break when it’s just the 3 of us.
A-to-Z Vegetable Soup
Ingredients
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1-2 TB olive oil
- 1-2 TB Italian seasoning
- 3 14 1/2 oz cans of beef OR vegetable broth
- 12 oz can diced tomatoes
- 16 oz package frozen mixed vegetables
- 1/2 C alphabet pasta
- salt and pepper to taste
- chopped parsley as garnish
Instructions
- In a large soup pot over medium heat, saute the onion and garlic until opaque.
- Add seasoning to taste.
- Add broth and undrained tomatoes.
- Bring to a boil.
- Stir in frozen vegetables and pasta.
- Cover and simmer until pasta is tender, about 10-12 minutes.
- Add salt and pepper.
- Add 1 TB parsley, optional.
