In this months installment of ‘Cooking with Sherman‘ on Fox 59 WXIN Indianapolis Morning News ,I was asked to make a few quick and easy recipes perfect for parents who are home with kids on spring break, that are easy and use ingredients that most people have on hand. I know that when I am home all week with my hungry guys it seems that I no sooner get one meal cleaned up before I have to start the next.
Enter these beauties. A few minutes in the kitchen for food that is big on flavor-small in prep time. My kind of food!
We started off with a breakfast (or anytime) smoothie and my new favorite 2 ingredient muffins. (muffin recipe HERE)
Then we made a light version of the pasta primavera. This recipe does not use cream so it is better for your waistline. I found this recipe a few weeks ago in Martha Stewart’s Everyday food and made some adjustments to allow for more asparagus and less pasta. It has just enough to satisfy my carb cravings but without all of the guilt. You can find that recipe HERE as well as in the April 5 issue if the Indianapolis Star in the reader Recipe column.
And lastly we ended with a foolproof recipe for Angel Lush. This recipe has graced more pitch in tables than Carrie Bradshaw has Manolo Blahnik’s!
And do you know why?
Because it is easy, inexpensive, low in fat and calories and can be assembled in 5 minutes or less if you have made it a lot, which I have. This versatile ‘recipe’ can be made using pineapple, mandarin oranges, mashed strawberries or coconut. With an ingredient list as simple as this one you simply cannot mess this up. On the left is Sherman’s. He tried-he really did! But some people can cook and some people are interesting and exciting television personalities with a beautiful smile and an amazing personality. Suffice it to say he is keeping his day job!
