Chocolate Chip Peanut Butter Cookie Dough Bites

That title is a mouth full isn’t it?
I saw Steve of The Black Peppercorn had posted this and I knew it would be a perfect activity for my kids.  We are getting ready to go back to school and I need to keep them busy. And, I am trying to squeeze in everything I can with them.
I will miss them!

Chocolate Chip Peanut Butter Cookie Dough Bites
1/3 cup butter
2/3 cup peanut butter
1/2 cup sugar
1/2 cup brown sugar
1 cup flour
1/2 tsp salt
1 cup chocolate chips (I used mini chips)
 Cream together the butter, peanut butter and sugars until smooth and the sugars have mostly dissolved.
Beat in the flour and salt until the cookie dough is crumbly but is an even consistency.
Mix in the chocolate chips.
 Roll the cookie dough into 1 inch balls. Place on parchment paper or wax paper and place in the fridge to chill.
I also dipped half of these in dark chocolate. Oh.My.Goodness! Why have I not thought of this before! Fantastic!!

My kids wanted to do this on their own, and they easily did. I pulled up the recipe for them on my XYBoard and flipped the easel back cover for them so it would stand upright.  The XYBoard has a coating on it that really protects it from splatters and the occasional flour storm.  It is easy to wipe off if it gets as little dusty.

Making Bananna Pudding..that was next!
