After flipping through this cookbook I found several recipes that were similar to some of my old family favorites that I had long forgotten. One was cucumber salad another was broccoli salad. This one was a particular favorite of mine when I was younger. I am the odd duck that actually craves broccoli!
I made this for my kids, with my own spin on it, and they loved it.

Broccoli Salad
1 1/2 C low-fat mayonnaise of your choosing
2 TB + 2 tsp sugar
3 TB vinegar (I used red wine)
6-8 C broccoli florets
6 slices of bacon, cooked drained and crumbled (I used turkey bacon)
1 small red onion, chopped (this was good with shallots too)
3/4 C Craisins
1/2 C unsalted shelled sunflower seeds
pinch of salt/pepper to taste
Mix mayo, sugar, vinegar, salt and pepper in a large bowl. Add the remaining ingredients and toss to mix. This is not a ‘saucy salad‘ which is why my kids loved it so much.
Crunchy, salty and sweet…what more could you ask for?
