Blueberry Nectarine Cobbler with Buttermilk Biscuit Top…

It all started with a bounty from the market….
And some buttermilk biscuit mix I needed to use from the Loveless Cafe
To make this!

Blueberry Nectarine Cobbler with Buttermilk Biscuit Top
8 small nectarines, pitted and sliced thin
2 C blueberries
1/2 C water
1/2 C sugar
1 TB plus 1 tsp cornstarch
1 TB fresh lemon juice
1/4 tsp ground cinnamon
Biscuit mix, prepared for topping.
I used my buttermilk mix from the Loveless Cafe. Use what you have. I wanted to mine to cover the top, you may want to just add little biscuit ‘islands’ to the top of yours.

Add the first 7 ingredients to a non-reactive sauce pan and cook on medium heat until a nice blue, syrupy mix, about 5 minutes.
Pour into a baking dish (mine was a deep rectangular casserole from Le Crueset), top with prepared buttermilk biscuit mix.
Sprinkle with a bit of sugar and bake for 18-20 minutes or until the biscuit topping is lightly browned and baked through.
Allow to cool for a bit and serve.
