Candied sweet potatoes with apples is a tasty switch from traditional sweet potato casserole. Thinly sliced sweet potatoes and apples are sweetened and baked into a delicious holiday side dish.

Every year, I mean EVERY year, I make these candied sweet potatoes.  Now, I do shake it up a bit, but the base of the recipe stays the same.  When it works…it works!

It seems like for the last few weeks, everyone and their brother has been sharing their treasured Thanksgiving posts and recipes.  And true to fashion, I am late entering the game. ????

This recipe is simple, quick and always a winner at family gatherings.  I modify it every year, adding fresh cranberries or nuts, but today, I am just posting it in its basic state.

I call this candied sweet potatoes with apples, but what I should call it is My Son Will Eat This and it Has Sweet Potatoes.

I don’t think he could pass up the butter, brown sugar and apple cider.  I mean, who could?
If you prepare this the day before the big feast (I always do), reheat in the oven at 325 until heated through, then remove right before your meal is ready.

Ingredients

  • 2 lbs sweet potatoes, peeled
  • 1 C firmly packed light brown sugar
  • 1 C of I Can’t Believe it’s Not Butter Spread
  • 1/2 Apple cider. I use cider, it is just not the same at all with apple juice
  • 1/4 tsp salt
  • 1 tsp pure vanilla extract
  • 3 large apples (Braeburn, Gala, or other cooking apple) cored and cut into 1/2″ rings

Instructions

  1. Cut sweet potatoes in half crosswise. Cook in boiling water for 10 minutes. Drain and cool. Cut into 1/2″ slices when cool.  
  2. (Alternately, you can slice the uncooked sweet potato into 1/2″ disks and skip right to the baking.  You just need to baste them every once in a while with the margarine/sugar liquid) 
  3. Combine brown sugar and the next 3 ingredients in a small saucepan. Bring to a light boil and simmer for 10 minutes. Remove from heat and add the vanilla.
  4. Layer the sweet potato and apple slices in your desired fashion in a buttered 9×13 baking dish.  Pour the glaze evenly over the slices. Bake, uncovered, at 400 degrees for 1 hour.  Make sure to base with the glaze liquid after 30 minutes and in the last 5 minutes to make a nice candied crunch on top!
