Simple egg pie is a baked eggs breakfast recipe that you are going to love! The quiche recipe is easy to adapt to use your favorite fillings and toppings, and it bakes up quickly. Perfect for breakfast, brunch, lunch, or even a light dinner.

Apparently, I have a new nickname… The Green Eyed Monster.  I hate to admit it, but I am so jealous of my husband that I can hardly speak to him.  Is this mature? Nope.  Can I help it? Well, maybe.

He is about to embark on his third, THIRD, manly weekend this calendar year, and I am stuck here with the boys and the dogs (one of which is sick) and a weekend of an outdoor swim meet that’s 2 hours away.

I am almost 35 years old and I cannot help but let the green-eyed monster of jealousy creep in.  It just so happens that I have green eyes, too!

I cannot tell you how much I need an ‘adults only’ vacation.  Yes, I know this is the plight of the average person.  I love, LOVE my kids, but I need to be away from everything for maybe two days. The house, appointments, doctors visits, housework, barking dogs, swim practice, deadlines, phone calls…the Internet. I need to leave it ALL behind and get out. Is this likely to happen any time soon? NO.

But, I digress. Back to the point of this post. My simple egg pie breakfast recipe.


My husband asked me if I could make him a little something for breakfast this weekend, so of course, I agreed.  I have been on an egg pie kick lately.  I have made 6 of them in the last few weeks, and every time, I make it a different way.

It was suggested to me by my friend at The Culinary Lens that I should stop calling this easy baked eggs recipe a simple egg pie and start calling it an egg tart, egg souffle, or I guess, just quiche!

Whatever you want to call it, this breakfast or brunch recipe could not be easier to make. I use what I have on hand and what my diners are in the mood for.  I made one this week, when my father was staying here, that had herbs and goat cheese. Sometimes, I use diced ham and white cheddar, or fresh herbs and prosciutto.

It may seem odd that it is so browned on the top, but my husband says that is the best part!

So to honor The Husband’s simple request, I made 2 simple egg pies for him to take to his friends for his golf/manly weekend. This is a great breakfast to make during the school year, too! I can heat up a slice in the microwave in 40 seconds, and my kids can eat and be out the door quickly.

Get creative with your simple egg pie, adding whatever cooked meats, vegetables, and cheeses your family likes.

Simple Egg Pie Breakfast

A simple baked eggs pie with cheddar cheese.

Ingredients

  • 2 deep dish 9-inch frozen pie shells (par baked for 10 minutes)
  • 18 eggs
  • 8 oz. of heavy cream or milk
  • sliced cheddar cheese
  • 4 TB of unsalted butter, COLD and diced into 1/4 inch cubes
  • salt/fresh pepper

Instructions

  1. Preheat oven to 350 degrees F.
  2. Add cracked eggs to a large bowl with the cream, salt, and pepper. Whisk until yolks are broken.
  3. Pour evenly into the 2 par-baked shells. Give each pie a sprinkling of salt and pepper and lay strips of cheddar cheese on top.
  4. Now add the butter cubes every few inches.
  5. Bake for 30 minutes at 350 F., or until the center is set.

Important Notes

If you want to make just one pie, halve the ingredients listed.
