Barbecue chicken sandwiches are the best easy dinner recipe for a busy weeknight! A quick homemade barbecue sauce is added to cooked rotisserie chicken. Crunchy homemade coleslaw is piled high on top, finishing off this easy, delicious barbecue chicken sandwich recipe.
Father’s Day is coming up in a couple of weeks, so it’s time to start planning our Father’s Day menu. Some of my husband’s favorite meals have great barbecue flavor. My barbecue salmon recipe is a favorite of mine, but he prefers barbecue pork, beef, or chicken.
He loves cooking on the grill, even on Father’s Day, but I want him to have a relaxing day and not worry about cooking. Besides, now that my boys are getting older, I think they may be taking over burger flipping duty soon.
This easy barbecue chicken recipe is one that I’m confident all of us will enjoy. My husband will love that it uses a homemade barbecue sauce, my boys will love that it’s used in sandwiches, and I love it because it’s SO easy to make!
Choosing which side dishes to serve with barbecue chicken sandwiches is almost a no-brainer for me. The crunchy homemade coleslaw will be on the sandwiches, but of course, we will probably eat it as a side dish, too. Most men will agree that when meat is involved, potatoes must be close by. I found a recipe for homemade potato chips that looks delicious, but we can never go wrong with potato salad.
I have a couple of my own recipes for potato salad, but I’ve really been wanting to make this southern style mustard potato salad recipe. Every time I see the photos, I can’t help but to drool a little bit. It reminds me so much of potato salad from a deli. The recipe is from Becca at It’s Yummi.
The only thing I haven’t 100% decided on yet is what dessert to serve with the barbecue chicken sandwiches. My husband loves apple pie, but not just any apple pie recipe, HIS apple pie recipe. I’m not about to relive the Tallman family pie war again, so I think I’ll stay clear of that for dessert. There are some great looking strawberries in the stores right now, so maybe I’ll go with strawberry shortcake, or peanut butter bars with fresh strawberries.
Or maybe something cool, creamy, and easy, like 2 Ingredient Chocolate Caramel Ice Cream. I just can’t decide, but I guess I won’t stress over it yet – there’s still time.

Ingredients

For the Sauce
- 1/2 C ketchup (I used no-salt added ketchup)
- 2 TB honey mustard
- 2 TB water
- 3/4 tsp ancho chili powder
- 3/4 tsp smoked paprika or any paprika you have
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp ground cumin
- 1/2 tsp Worcestershire sauce
- 1/8 tsp kosher salt
- 3 C shredded cooked chicken, boneless, skinless (I used rotisserie chicken)

For the Slaw
- 3 TB canola mayonnaise
- 2 TB cider vinegar
- 1 tsp sugar
- 3 C pre-shredded coleslaw, I used a bagged blend
- 1/3 C shopped green onion
- hamburger buns, toasted
Instructions
- Combine the first 10 ingredients in a saucepan. Bring to a simmer and cook for 10 minutes on a medium low heat.
- Remove from heat and stir cooked chicken into the sauce.
- In a bowl, combine the mayonnaise, vinegar, and sugar. Add the cabbage slaw and green onions and stir to combine.
- Place a small amount of the chicken mixture onto the bottom half of a bun. Top with a spoonful of slaw and add the top of the bun.
