Mango duck mini tostadas are a quick, easy, and flavorful appetizer for any occasion. Fresh mango, shredded duck breast, red onion and spices sit in bite sized corn tortilla cups with fresh guacamole. These mango duck mini tostadas won’t last long at a party!

This mango duck appetizer is one of the dishes I prepared for a demonstration at Indiana’s Fantastic Food Fest. The turn out was fantastic (pun intended) and we had a great time! I chose this particular recipe because it is easy, packed FULL of flavor and can be made as an appetizer or in a larger portion using a flat taco shell. Plus I think the mango duck is a great combination of flavors. If you have never tried duck before then this is THE recipe for you! I used my favorite Maple Leaf Farms Duck for this. They are the largest producer of white pekin duck in North America- AND- is based in Indiana!

Setting up for a demonstration takes a lot of preparation. Thank goodness for large demonstration spaces. BIG thank you to the Ivy Tech Culinary School for their help and staffing!

The prep is simple: cooked shredded duck, chopped or canned mango, diced red onion, some lime, and a quick guacamole. Layer the duck mixture on a crispy base and top with a dollop of guac and bite into the flavor explosion! Mango Duck Tostadas are healthy too! Duck fat is rich in the good stuff. That’s why french fries taste so good when cooked in duck fat ????

Ingredients

  • 2 C cooked duck breast, shredded
  • 1 C canned diced mango, well drained (or 1 C fresh-diced)
  • 2 TB red onion, minced
  • 1 small jalapeno, seeded and minced
  • 1 TB fresh cilantro, minced
  • 2 limes, juiced, 1 zested
  • 2 TB olive oil
  • Pinch kosher salt
  • Fresh black pepper
  • Dash of hot sauce
  • 2 large ripe avocados, mashed
  • Small, flat tortilla chips or mini-tostada shells

Instructions

  1. Combine duck, mango, red onion, jalapeno and juice of 1 lime in a small bowl.
  2. In another add mashed avocado, zest of 1 lime, juice of 1 lime, salt, pepper and hot sauce.
  3. Add a dollop of avocado to a tostada, top with a bit of duck mango mixture.
