It’s easy to customize to your family’s tastes. Add any veggies you like, and add protein like ham or turkey to it for a complete meal!

Summer is just around the corner, and for me, that means salads ????  I love a good pasta salad, and I love to add fresh greens and vegetables to it.
So today I’m bringing you a recipe for my vegetarian pasta salad with spinach, veggies and creamy feta cheese.

This vegetarian pasta salad is pretty inexpensive to make, and with a family to feed, that is very important.

This pasta salad is great for those warm weather months when you do not really want to cook dinner. It combines all my favorites, fresh vegetables, greens, olives, pasta, and of course cheese ????

Here’s what you’ll need to make it:
rotini pasta
tomatoes
black olives
spinach (or baby spinach)
feta cheese
If you have other fresh veggies on hand, such as bell peppers, celery, or carrots, you can add those, too.

Ingredients

  • 1 box (16 ounces) of rotini pasta
  • 2 tomatoes, chopped and seeds removed
  • 1 small jar of Kalmata olives, chopped
  • 1 1/2 C crumbled feta cheese
  • For the Dressing
  • 1/2 C olive oil
  • 1/2 C red wine vinegar
  • 2 Tbl minced garlic
  • 1 tsp salt
  • 1/2 tsp ground pepper
  • 1 Tbl dried basil
  • 1 Tbl of olive juice
  • Topping
  • 2 C chopped fresh spinach

Instructions

  1. In a large pot of boiling water, cook the noodles according to the directions on the box. Then drain them and run them under cold water till they are cooled down.
  2. Put the pasta into a serving bowl. Now chop your tomato and olives and add them to the pasta. Add your feta cheese and stir till combined. In a small bowl, whisk your olive oil, vinegar, garlic, salt, pepper, basil, and olive juice. Taste it to make sure it’s to your liking, adding more salt and pepper if needed. Pour it over the pasta and stir well. Add chopped fresh spinach when serving on each plate.
