Quick and Easy Baked Apples

The other day a Facebook friend of mine, Rhonda, asked me for my recipe for quick and easy baked apples. I then realized that this is a recipe I make often using apples or pears and I have never shared the recipe here. I am correcting that mistake today!

Today my oldest and I took a quick trip to one of our favorite local orchards, Anderson Orchard, and grabbed a peck of Gala’s as well as a few fried apple delights that we gobbled down as quick as we could. I knew that with this peck of apples I could make not only quick and easy baked apples but also a small batch of sauce, turnovers and have enough left for snacking. They are just the right size neither too big nor too small.

I also picked up a few of their large selection of squash- a Koosha, which I prefer to pumpkin in pies.

I also grabbed a few spaghetti squash to make spaghetti squash and sausage saute. Recipe coming soon! Once we had stocked up we headed home to finish off the beef stew and 3-bean chili I had started before we left. It was just what we needed on this chilly October day. I had planned to make another batch of pumpkin butter cake for us to snack on over the week but those apples- they were calling to me.

This is one of the best quick fall recipes using apples that I have and like I said earlier- I make it often.

I left a bit of peel on- because I was too lazy to cut it all off. I DO think this is better using peeled apples. That is just my preference.

Quick and Easy Baked Apples

Ingredients

  • 5-6 medium sized firm yet sweet apples- I used Gala’s
  • 1/2 stick of butter (4 TB)
  • 1/4 tsp of ground nutmeg
  • 1 tsp of ground cinnamon
  • 2 TB of light brown sugar
  • pinch of kosher salt

Instructions

  1. Preheat oven to 350 degrees.
  2. Peel and core apples.
  3. Place in a baking dish that is at least 2 inches in depth, sitting upright.
  4. In a small bowl add the butter and melt via microwave.
  5. Whisk in the sugar, cinnamon, salt and nutmeg.
  6. Pour over apples.
  7. Bake for 45-50 minutes or until desired tenderness.
  8. Serve as is, with a drizzle of caramel or with vanilla ice cream and nuts.

Important Notes

**I like to flip my apples over 1/2 way through the bake. That way the apples get a good coating of the butter mixture.
