Zesty  Slow Cooker Chicken, Green Beans, and Potatoes  

You guys! I can count on ONE hand how many times I have cooked something and added it to the site in the same day. I rarely do that- there is just no time! By the time the food is done, the kitchen is cleaned and the boys are in bed I am BEAT! But tonight, tonight I had to get this to you quick. I asked my husband to take over my cleaning duties so I could get this to you and that is exactly what I am doing.

But this recipes needs to get in your hands~ Slow Cooker Chicken, Green Beans, and Potatoes  may be your new go-to “I don’t feel like making dinner” dinner.

I have made a version of this several times and every time I am unhappy with the results. Too dry, too mushy or too many seasonings. This meal is the quintessential quick weeknight, family-pleasing meal. It took me all of 5 minutes to prepare and required no tools other than a J.A.%20HENCKELS INTERNATIONAL Kitchen Elements 3-pc Paring Knife Set, BlackOXO%20Good Grips 2-Cup Angled Measuring Cup

I bought a family-pack of boneless skinless chicken breasts at Meijer for $8.77. Layer 5-6 chicken breasts in the bottom of a slow cooker crock.

I always, always have a dehydrated package of salad dressing in my pantry. It adds quick hits of flavor and in this case is made up of dehydrated spices, garlic, onion and peppers. It cost $1.46. Sprinkle the entire packet over the chicken.

Sprinkle 1 TB of dried basil over the Italian dressing packet contents. Also add a pinch of kosher salt and a few cracks of black pepper.

Drizzle 1/4 C of olive oil over the chicken.

Wash 2 lbs of Russet potatoes and slice inhalf horizontally. I did this with a paring knife in my hand. No need for a cutting board. Be careful. Place on top of chicken.

Every week I but this large (5 lbs I think) bag of trimmed raw green beans. Every week. It was $4.19 and I usually get 3 uses out of it. You can just grab what you need. Add what equates to 2 lbs of trimmed green beans to the top of the potatoes. Obviously you can use less if you don’t want that many.

I should mention that I have a large crock pot. If you have a smaller one use less of everything. But keep the liquids and the seasonings the same. If anything it will taste more zesty and that is NOT a bad thing.

Lastly, I pour 1 C of water over the top, place the lid firmly in place and cook on low for 6-7 hours or until the potatoes are tender to the fork. Do not stir, do not move the contents. They are layered this way in order of what needs the most direct heat. The green beans certainly do NOT so they are the last layer. Resist the urge to lift the lid too many times. You add to the cooking time. You may also cook on high for 4-5 hours. It is up to you but you need to monitor it for doneness.

 

 

The finished plate. The chicken is fall-apart tender and the potatoes are not overdone. The seasonings are just right and my kids ate without complaint.
