Power Your Lunchbox Pledge by Produce For Kids

I have been sharing a lot of back-to-school recipes in the last few weeks. My kids went back to school on July 28 (which is nuts) and I have been in full prep mode ever since. My kids are getting older and their nutritional needs are changing. What used to be cute is now by the wayside to make room for more filling lunches that keep them going all afternoon. My sons are 15 and 11 now so cutsie lunches are out- big kid food is in. One of their favorites is this grouping that features an easy to make ahead black bean and rice taquito, guacamole and chips, mango-peach salsa and hummus filled sweet peppers.

Making the taquitos ahead of time and using great products like these from Sabra save time as well as stock my refrigerator with foods that even I want to eat for lunch! That is key for me- I only want to buy/make food that we all can eat. There is no real recipe here- just another option on lunch time fare. This is all stable with the addition of a cooler pack and requires no heating. Add a bottle of infused water (and they can and do eat the fruit after they are done) and you are set.

This is a real, real life, realistic lunch. I don’t do cute cutouts, fancy packaging, or food they will throw away. They only have SO much time to scarf all of this down. So I am careful to only pack the amount and selections they will eat. Plus, I rely pretty heavily on making large batch recipes they can eat all week like pasta salads, fruit salads, and these taquitos. We use a lot of tortillas in our house.
