Shredded Brussels Sprouts Saute – An easy holiday side dish

I think I have found my ultimate convenience food. Yes, I can certainly chop and slice my own Brussels sprouts. But why when I can buy these that are already done for me? These shredded Brussels sprouts are not expensive either.

I bought these at Trader Joe’s during my monthly shopping trip there. I snagged the last 2 bags much to the chagrin of the woman who simultaneously reached for the remaining bags too slowly. She was on to something. Now I know what. ????

I love shredded Brussels sprouts. Actually, I love them whole, too. I am a veggie eater and so is my family, but sometimes the sprouts have to be disguised a bit so my oldest AKA Mr Pickypants will eat them. So what do I do with them? I saute them with meat, sprinkle on sweetness and toss in Craisins.  BOOM. They are gone in minutes.

I used diced pancetta for this but feel free to use what you like.  6 strips of high quality (diced) bacon, diced ham-whatever floats your boat. I used 8 oz here because I made a double recipe.  Below is my recipe using one 16 oz bag of shredded Brussels sprouts.

What if you can’t find pre-shredded? Then get out your knife and slice away ????

Shredded Brussels Sprout Saute

Shredded Brussels sprouts are sauteed with pancetta and cranberries in a sweet balsamic vinegar sauce. Great for holidays or any days!

Ingredients

  • 16 oz bag pre-shredded OR shred 2 lbs of whole sprouts that have been washed and trimmed
  • 8 oz pancetta, diced small
  • 1 TB olive oil
  • pinch kosher salt
  • freshly ground pepper
  • 1 C dried cranberries
  • 2 tsp sugar
  • 1 TB red wine vinegar or balsamic vinegar (your choice)

Instructions

  1. In a shallow saute pan cook the pancetta in olive oil on medium heat until browned and crispy.
  2. Turn heat to low and sprinkle on the salt, pepper, cranberries, sugar and vinegar.
  3. Stir to combine.
  4. Add the shredded (or chopped) sprouts.
  5. Toss to combine.
  6. Allow to saute for 2-3 minutes on low.
  7. Remove from heat when cooked for just a bit- you want them to still be firm but brighter in color.
  8. Serve warm.
