Zucchini dip is a great recipe for using garden zucchini. Creamy, cold, and oh so easy, this zucchini dip is incredibly dreamy! An easy dip recipe for summer.

I am always looking for fun ways to incorporate what is plentiful at the time into my meal rotation.  This easy zucchini dip was a little of this, a little of that. Thank goodness I was writing it all down!
The Philadelphia Cooking Cream I used really made this dip.  It added a creamy and smooth texture that I couldn’t get with just using cream cheese alone.
 

Since I have SO many friends who have gardens and like to share, I have zucchini coming out my ears! Along with this easy dip recipe, I used my zucchini to make zucchini pancakes. They’re so good! The great thing about this recipe is that it doesn’t matter how big the zucchini are. You’re cutting it up, so you can use the giant sized zucchini if you have them.

Because the dip is so creamy and cold, it is a great dipper for fresh vegetables, or on crackers. I have even used it as a spread for sandwiches and my boys don’t even notice that there is a healthy vegetable in there.

This easy zucchini dip is a great way to use those fresh garden veggies.

You can make it with yellow Summer squash, too!

Creamy Zucchini Dip

Creamy, cold, and oh so easy, this zucchini dip is incredibly dreamy! Recipe makes about 2 cups of dip.

Ingredients

  • 1 TB olive oil
  • 1 lg zucchini, shredded and allowed to drain of ALL excess liquids
  • 2 cloves minced garlic
  • salt/fresh pepper
  • 1 10 oz container of Lemon herb Philly Cooking Cream
  • 1 4 oz package of goat cheese, plain

Instructions

  1. Saute the shredded zucchini in a hot skillet over medium high heat with the oil , salt, pepper and garlic for 5-6 minutes or until just soft.
  2. Drain of all liquids and add to a bowl to cool.
  3. When cooled, add the goat cheese (crumbled) and the cooking cream.
  4. Blend to a smooth consistency, or chunky if you prefer.
  5. Refrigerate until very cold.
  6. This is great as a dip, really good spread on a sandwich or bagel!
