Everyone has a favorite snack.  A recipe for a go-to stress reliever, mindless munching or a quick nosh for get-togethers.  For me, that is a bean dip. Whether white bean, black bean or garbanzo bean, there are so many possibilities for the legume.

I have a base recipe that I use and just rotate ingredients based on what I have on hand or what sounds good.  Garlic, lemon, parsley, salt and pepper, sometimes Tahini paste and beans.  What more do you need to make a creamy dip for veggies and crackers?  Spread in on Naan and you have a great lunch with olives and cucumbers.

My recipe is an adaptation of a Giada recipe.  I have tweaked hers, but I wanted to point out that I was inspired by her RECIPE.

White Bean Dip


1 15 oz can of Cannellini beans, drained and rinsed
3 cloves garlic
juice of 1 small lemon
1/3 plus 4 TB olive oil
1/3 C loosely packed flat leaf parsley leaves
salt and fresh pepper

Add ingredients to bowl of a food processor.  Pulse until thoroughly combined.  Serve with veggies, pita or pita chips.
